Zesty Quinoa Salad

Finally a quinoa recipe with flavor! Easy to make too. I used half the salt, half the lime, 1/3 less oil, canned diced tomatoes, substituted paprika for red pepper flakes, mexican corn blend, and garbanzo beans.

Cayenne Pretzels

These are worth the wait. I didn't get very many as they disappeared fast! I tried the 2nd batch with less oil and the family disapproved. I added double the amount of cayenne and I was disappointed with the lack of fire, but otherwise the flavor is very good.

Spinach and Black Bean Pasta

I really liked this pasta combination. I thought it sounded different, which was what I was hunting for. It wasn't the prettiest dish. I used chicken broth and sprinkled extra cayenne on each serving along with the parmesan. Wow! A great blend of flavors!

Cream Cheese Penguins

These were a big hit at Thanksgiving. Easy to make and a fun family activity. I used a chive flavored cream cheese which was fine but I wished I had gone with a stronger tasting cheese. Next time I will use ranch flavored. Thank you!

Italian Pasta Salad I

Can you ruin this great recipe? I doubt it! I thought I had all the ingredients. It still turned out very well when I used only half of the amount of caesar dressing and upped the italian dressing to make up for it. I also put in less green pepper and onion then the recipe called for. Still tastey. To bulk it up for a meal I added mozzerella shredded cheese and sliced black olives. Thank you.

Addictive Sweet Potato Burritos

No one in our home likes sweet potatos but the reviews got me to try it. My picky eaters really liked them and so do I. I made half the recipe and came out with 6 huge burritos and leftover filling for another 5 smaller ones. I didn't get to the store for more tortillas for 2 days to finish them up and there was no problem with leaving the extra in a sealed container in the refrigerator. I microwaved one for lunch for just a few minutes and there was no mushiness. Handy for brown bag lunches. Thank you!

Orzo and Rice

This is a family favorite with a few additions. 4 green onions, 2 tsp minced garlic sauted with the butter and orzo, 1/4 cup finely chopped broccoli and carrot. Top with cashew pieces and season lightly with garlic salt to serve as the main course. I will sometimes stir in some shredded cooked chicken. I make it easiy with 1 can chicken broth and 1/4 cup water instead of bouillon.

Soft Sugar Cookies IV

Fast & Easy! I didn't want to decorate so I took half of the sugar that was meant for decoration and added it to the dough. I also used 1 tsp vanilla & 1 tsp almond flavoring. Perfect!

Slow Cooker Chicken Taco Soup

This dish is on my regular menu rotation. I don't use a slow cooker, I make it on the stove top. I add all the ingredients and heat on medium heat for 20 minutes. That's it! A very adaptable recipe to suit your taste. My vegetarian 15 yr. old loves it so I add rotisserie chicken to my portion only. I don't use diced tomatoes either, just sauce. Freezes well too!

Vegetable Cashew Saute

REVIEW ADDITION: I served this cold at a family picnic with no changes. Many compliments! This is delicious. My teen just decided to be a vegetarian and I was looking for high protein meals. I made a half recipe and served it over noodles. I omitted the mushrooms, used EVOO instead of dark sesame oil and red wine vinegar for the balsamic vinegar. Thank you DVDANDDV, she went back for seconds!

Crunchy Turkey Salad

This a sweet, tasty salad. You can make substitutions easily. I've made this with apples and also with cranberries. As much as I love cranberries, I thought the apples made for a better balance of flavor, cranberries really ramp up the sweetness. I used half of the lemon and substituted honey flavored Greek yogurt for the sour cream and the honey. I've tried both walnuts and almonds and unless you are a huge walnut fan, the almonds are better. I also tried doubling the dressing but it was way too creamy for my taste. I added more turkey to remedy that. Thank you so much for sharing!
