Hearty Minestrone

This was excellent. I used smoked sausage instead of links, mushrooms, pinto beans, onions, and summer squash. My baby went crazy over the broth, and it was enjoyed by my six-year-old as well. A great, adaptable recipe to what you have on hand.

Classic Irish Boiled Dinner

I didn't have a smoked pork - just regular, but I wanted to try this anyway. I didn't add the cabbage or beans. My pot wasn't big enough and I had a different recipe for cabbage anyway. To add more flavor I boiled the pork, potatoes, and carrots in chicken stock. Wow! The meat came out tender and the vegetables were so good! My husband loved the way my yukon potatoes turned out so much that I made him more with the leftover broth the next night. I will definitely be using this method again. Thanks!

Easy Pilaf

My husband told me twice how good this rice is. I added a little bit of minced garlic after the onion was done. Instead of baking it, I added the broth then brought it to a boil over medium heat. Then I turned it down to simmer and covered it. It took 15 minutes for the rice to absorb the broth. Definitely will make again!

Flourless Chocolate Cake II

A huge hit! I didn't have solid chocolate, so I substituted with chocolate chips. I made it peanut butter flavored by using 1/2 c pb instead of butter and used peanut butter chips instead of semi sweet. It was good the first day but 100% better the next so let it sit awhile.

Carol's Chicken Chili

Very good. I didn't have a can of green chile peppers so I used a teaspoon of chili powder instead. I also put in 1/4 tsp of lemon pepper instead of the crushed red pepper. Even my 3 year old asked for leftovers today. That says a lot!

Jiffy Ground Pork Skillet

Tasty recipe. I didn't have stewed tomatoes so I put in 15 oz tomato sauce, then, per another reviewer, added minced garlic and a can of great northern beans. I served it over leftover mashed potatoes. Thanks!

Roast Beef Pasta Salad

This took a while to prepare and I was quite excited about it. I let it sit in the fridge for several hours. Wow! It is so strong. The onions really do something. It was okay. My kids wouldn't eat it and I ended up throwing the majority of it away.

Pork Chops with Herbed Gravy

I used this recipe to make gravy for my leftover pork and rice. It was excellent. I doubled the butter, flour, and chicken broth, used 1/2 tsp Italian seasoning and 1/2 tsp minced garlic. It simmered for a while and was fabulous!
