Rich and Simple French Onion Soup
LOVED IT!! After reading other reviews I opted for carmelized onions (4 large) prevent less tearing, put them in the fridge the day before, used red wine (almost used an ale beer instead, will try that next time)...added 1/2 c red wine when onions were a their prime, cooked off the wine and sprinkled with a little flour. added 12 cups water with 12 beef bullion cubes and 2 paks swanson beef boosters. I let it come to a boil and let it simmer for 20 min. I added another 1/4 cup red wine and let it simmer for another 20 min. It was pretty amazing! Definately going to make this again!

Boilermaker Tailgate Chili
This recipe is ok. I think that if you elimate the bacon bites and substitute for real bacon and cook your onions and bell peppers, green chilis then add your beer and spices and then add your sauce ingredients and then your substantial ingedients, especially if you use a poreace pan to capture the flavors of the could be 5 stars. I made this for a chili cook off and was embarrassed. I definately will do more experimenting to find "my perfect recipe."

Southern Hollandaise Sauce
This recipe is very simple. I doubled everything except the lemon juice and it was still to much. I will make this again but 1 1/2 teaspoons instead of a full 1 1/2 tablespoons.
