Big Soft Ginger Cookies

for some reason even though i made tons of batches, only the very first batch came out perfectly. they were absolutely delicious though, everyone loved them.

Pumpkin Mochi

When it first comes out of the oven and it's still warm, you won't think it's mochi at all, but just gooey cake......delicious, yes, but not very mochi-like. well give it lots of time to cool off, and it'll reach a much more mochi-like texture. not exactly like mochi but very close and very tasty!!!

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

Delicious!! I was playing around with different methods and I wound up putting the sugar directly in the oil/butter, which worked ten times better. i also skipped salt, but they're awesome. i think getting the ripest ones you can is best, but if you can only get the green ones, don't fret, they're still tasty.
