Beer Margaritas
This is so refreshing! Made this as specified but I did decrease the water by 1/2, added 4 oz of triple sec and the juice of one lime. I doubled the recipe to serve a crowd and everyone loved it! It does not taste like beer or a margarita really, but it is good!! Tart, tangy, slightly sweet and so refreshing!! Goes down way too easy, so watch yourself!!

Tuscan Bean Soup (Ribollita)
What a taste sensation!! The only things I changed was to add 2 tsp of Italian seasoning, "Fire Roasted" tomatoes, upped to 2 cans of beans and added some cabbage I wanted to use up. I also used chicken stock rather than vegetable because that's what I had on hand. Other than that, everything else was the same! Served it up with some good crusty bread! Good hearty, warm soup for a damp cold night! Thanks AJ!!

Country Breakfast Casserole
Great base! This is an excellent base with all kinds of possibilities! Now, do make sure your sausage is well-drained. You could add cooked mushrooms, more onion as I did and peppers, maybe even a Florentine with broccoli (well drained and chopped) and other cheeses. I also added some Cavendar's Greek Seasoning. Great stuff if you haven't tried it yet! Stale bread works best. This could even be excellent with cooked spinach, kale and swiss cheese! Enjoy!!
