Couscous with Chickpeas and Carrots

Salsa Chicken Rice Casserole

This was great!!! It did need a wow!. So I added garlic, cayenne pepper, chopped some little green mild peppers and I cookrd the rice in the chicken stock. YUMMY!!!!!

Southwest Chicken Quesadillas

This was pretty good. I did find that the salsa amount was a little to much. But, I had to use the option to increase the serving size to 9 so we would have lunches for work so that might be why I thought the salsa amount was to much. I used half the mayo and half sourcream. I will make again becasue it's fast and easy with a little less salsa.

Salmon With Green Fettuccine

I loved this recipe. Of course I tweaked it. Becasue I am not a big fan salmon I used cod . I baked the fish and served it over the noodles and sauce. I also used some olive oil, butter, salt, Cajun seasoning, lemon pepper on the fish. I used a little half and half in the sauce. I used a vidalia onion so the sauce turned out a little sweet.

Cheese Dipping Sauce

This is okay. I needed something very fast and I had these ingredients in the frig. We used it with chicken nuggets. Next time I will add hot sauce for a kick!

All that complaining about it being authentic didn't mean anything to us, we had nothing to compare it to. The bottom line is if you are looking for a recipe to use these ingredients in, this is the one. My son LOVED this and he is pretty picky. My husband said it was okay. He could take it or leave it. It was okay for me.

Mom's Stovetop Pork Ribs

Great easy recipe. I doubled the recipe and added a lot more spices/seasonings including hot sauce. My family really liked it. It was even better the next day when the spices/seasonings soaked in!!!

Lightning Gravy

Great with some adjustment!!! We used 2 cups of meat and meat juice drippings instead of water and also added bouillon. Wanted it a little thicker will use a little flour also next time. Great for a very fast gravy.

Fabulous!!! The finished product looks gross but tastes divine!!! I did tweak the recipe by adding a block of cream cheese. My whole family loved it. Yummy, yummy!!!
