Easy Vegetarian Pasta

I took the advice that others have written (thank you!) and added oregano, basil, and crushed red pepper. I substituted regular tomatoes for grape tomatoes, which I added at the last minute (if you cook them as long as you cook everything else they will be mushy). I also put in significantly more feta than the recipe recommends. With these changes, it was extremely delicious.

Creamy Artichoke Pasta

I loved this meal! I used feta instead of cottage cheese for taste preferences and I added some fresh spinach and extra artichokes for more vegetables. I added fresh basil and extra garlic. I used egg noodles instead of spaghetti for more protien. If you make it with regular pasta, I recommend a short noodle instead of spaghetti.

Spinach Mushroom and Ricotta Fettuccine

I modified this recipe a bit and found it to be pretty tasty. I used olive oil as well as butter and added garlic, onion, salt, pepper, and fresh basil with the mushrooms. I used fresh spinach (a little over a 6 oz bag) and a little less ricotta than is called for. I think it could have used juice from an extra 1/2 lemon. I will make this again. I think it's a nice recipe to experiment with and flavor as you will; I imagine it would be incredibly bland as written.

Lebanese Chicken and Potatoes

This is super easy to make (alhtough it takes a while to cook), light, and healthy. I took others' advice and added extra garlic (2 cloves), cumin, and allspice (1 tsp. each) to the sauce. Next time I'll cut up some onion and carrots (you could probably use any root vegetable) and add them to the chicken and potatoes. I also did not peel the potatoes (the skin holds a lot of the nutrition) and I think this made the dish more flavorful and also kept the potatoes held together much better (they were a little crumbly), so I definitely recommend doing that.

Quinoa and Black Beans

This was really easy, fairly healthy (low fat but not as much protien as I would like), and tasty. It could be a side dish or a main course. It's also a very asthetically pleasing dish. I added extra of all the spices and garlic. I substituted some of the broth for water and used low sodium broth. I also added diced red peppers and zucchini when I put in the corn; this worked really well and added nutrition and color.

Chicken Potpie

This recipe was great and much easier than I thought it would be. I added fresh broccoli (I added it to the potatoes and carrots about half-way through their simmering) and garlic (added to the butter and onions). I used low soldium vegetable broth instead of chicken broth. I brushed the crust with butter and covered the edges with tinfoil before baking. It turned out great! Quick note: I halved the recipe and still had enough filling for 2 pie (although the second one had less filling than I would have liked). This recipe as written could easily make 3-4 pies.

Unsloppy Joes

This was fairly easy and quick, but not my favorite. I used a food processor to chop up the vegetables, which made it easier. Next time I will add some vegetable stock to the vegetables to make sure they do so more evenly. I used cayenne pepper because I didn't have any chili powder and it was way too spicy for me, so I had to add cheese and sour cream to counteract this (which made it more palatable but considerably less healthy). It definitely needed some form of salt to counteract the spice. My boyfriend, who much prefers meat, enjoyed it, though.
