Chuck's Favorite Mac and Cheese

Reviewed: Feb. 16, 2010
Wow! This recipe was wonderful. My son normally eats his meat first, not this time...he inhaled his macaroni first, my daughter went nuts over it, they both requested to take the left overs to school for lunch the next day. Hubby loved it too. As suggested by other reviewers, I added 1/2 cup of milk. I will definately make this recipe again. Thanks!

Philly Cheesesteak Sandwich with Garlic Mayo

Reviewed: Feb. 10, 2010
My husband and kids are still talking about how wonderful this sandwich was. My recommendations are: I sauteed the onions and peppers in olive oil first, remove from pan...I then seasoned the meat (I used sirloin steak) with sea salt and black pepper and seared on all sides in drippings from the onions and peppers. I transfered everything, including 1/4 cup of beef broth to a crock pot and cook on low for 6 hours. Served with roasted garlic mayo, mozzarella cheese and sautee mushrooms on bagette warm bread. Yum!

Oatmeal Chocolate Chip Cookies I

Reviewed: Dec. 15, 2009
These by far were the best oatmeal cookies my family and I have ever had. Did not have shortening so replaced it with butter and added 2 tsp. vanilla. My son does not like cholocate chip so I used Ghirardelli Classic White Chips. So good!

Peanut Butter Oatmeal Cookies

Reviewed: Nov. 12, 2009
The best peanut butter cookies I have ever had. My husband could not stop eating the dough. Only changes I made was I used chunky peanut butter instead of regular smooth peanut butter; did not have shortening so used 1 cup of butter as a substitution. AWESOME COOKIE!

Applesauce Barbeque Sauce

Reviewed: Nov. 4, 2009
Gave this awesome recipe only a 4 instead of 5 because it uses way too much sugar. The only change I made to the recipe is instead of 2 cups of sugar I used 1/2 and it was still sweet enough. Used it over porkchops; YUMMO!

Spooky Witches' Fingers

Reviewed: Nov. 3, 2009
Awesome recipe! Hubbie, kids, kid's friends from school loved the cookies. My husband thought they looked so real and too spooky to eat, even though they were yummy. I made two batches in two days, the second batch I added green food coloring and it turned out great, thank you for a great spooky halloween cookie.

Slimmers Pumpkin Soup

Reviewed: Nov. 30, 2008
This is a good base recipe, however, for more flavor and if you are not watching calories, not that this soup has a lot to beging with; I added a large carrot, 1 clove of garlic and a med. size granny smith apple. I pureed, the potatoes, carrots, apple, onion and garlic in a food processor and sauteed in 4 tblsp. of butter until soft. I transfered everything to a large pot, including the pumpkin puree which my so generous girlfriend gave to me after doing all the work, and then I added 1/2 cup of brown sugar, 1/4 cup of maple syrup, 2 tsp of cinammon, 1/2 tsp. of ground ginger, 1 tsp. of ground nutmeg, 1 1/2 tsp. of salt and a handful of chopped fresh parsley. I also added 1/2 tsp. of dry thyme and 5 cups of chicken stock. I used Herbox Instant bouillon very tasty. Bring to a boil and simmer for about 30 minutes, cool and then use a hand blender to puree and remove any lumps. My finicky 10 year old loved it and enjoyed watching me prepare it and expirimenting with different ingredients to add flavor to this soup. I love fine dining and I believe that this soup could sneak its way into one of those fancy restaurants I like to frequent.

Zucchini Walnut Bread

Reviewed: Jul. 11, 2008
Instead of 1 cup of oil, I put 1/2 of oil and 1/2 of orange juice to cut down on the fat. I also added extra zucchini. Excellent!
