Twice Baked Potatoes

I fixed this for some company last night and they were an absolute hit! I didn't have mushrooms and the didn't use the red pepper or the bread crumbs - but they still turned out awesome. Nothing but compliments on this one.

Big Soft Ginger Cookies

I am actually baking these cookies as I write this review. I cheated and tried one a couple of minutes out of the oven. One word - OUTSTANDING! I used the orange juice in place of the water and I also used another reviewer's advice and put the dough right into the sugar and rolled them like that - much less sticky. I made them a little smaller than suggested and it looks like I'll get about 3 dozen cookies - and they are plenty big. Thanks for the great recipe! Addendum: My grandson came to visit and I was sure he wouldn't like such a spicey cookie. Boy, was I wrong! He asked for these daily. I am baking some more and sending them to him!

Banana Crumb Muffins

Holy cow! These are absolutely awesome. I, like others, added 1 tsp. vanilla, a dash of nutmeg and some extra cinnamon in the muffin mix. I put the topping on as I was putting them in the oven and I didn't notice that it "sank" into the batter. Mmmmm, mmmmm good!!

Smothered Beef Short Ribs

I, too, decided to put these in the crockpot, after getting everything ready on the stove. They cooked all day and the house smelled so good! I spooned out some of the broth (which did not thicken) and thickened it on the stove with a cornstarch and water mixture. I did not have canned beef broth, so used boullion cubes to make about five cups of broth. My husband really liked it and is glad we have leftovers for another night. I made mashed potatoes, biscuits and green beans to go with it. Will definitely make this one again!

Empanadas

I had our neighbors over for dinner and made the Enchilada Casserole II on this site, along with a taco salad. I made these empanadas for dessert. I made half with apple pie filling and the rest with seedless raspberry jam. They were very good, served with vanilla ice cream. Thanks for the great recipe!

Beef and Irish Stout Stew

There is one word for this stew - FANTASTIC! I took the advice of another and made the Irish Champ (mashed potatoes) on this site, poured the stew over the potatoes, and it was absolutely incredible. My husband was so impressed with it, he wants me to make it when his parents come to visit!

Blackberry Cobbler

At first I thought the preparation was strange, but decided to follow the recipe exactly as written. It was absolutely scrumptious! The crust was really good and I thought it was super-easy to make. My husband REALLY loved it and sad to make sure I don't lose the recipe!

Enchilada Casserole II

We absolutely love this recipe! I have made it for my parents, my in-laws, neighbors, friends, and everyone absolutely loves it. I have never deviated from the recipe and it turns out perfectly every time! I actually think it is more like a "mexican lasagna", instead of a casserole. Yummy!

Pot Roast in Beer

I followed this recipe pretty much to a "t", except I did not have any cheesecloth, so I put the bay leaves right in the sauce and used ground cloves. It was delicious! My hubby said it was definitely one I could make for him again.

The reason I only gave this was a four was because I like a recipe that puts out what it says it does. I only got 31 cookies out of this, which is about half of what it said you should. I don't really think I made them too large, either. In fact, I feel they are on the small side for a cookie. The taste is wonderful and the kitchen smells great!

The Best Rolled Sugar Cookies

Wow! This cookie dough WAS super-easy to work with. I added a little extra vanilla, as others suggested, but other than that I folloed the recipe exactly. My cutters I used were rather large, so I only ended up with about 40 cookies. Next time I will be making a double-batch of this one!

Garlic-Lemon Double Stuffed Chicken

I thought this chicken was out of this world! I didn't have any lemon juice on hand, so I substituted orange juice and you could not tell it. My hubby loved it and thought it was definitely worth repeating.

Berry Bread Pudding with Brown Sugar Sauce

The only reason I'm giving this a "four" is because I did not make the bread pudding, only used the brown sugar sauce on another bread pudding recipe - it was yummy! I will try the whole recipe in the future, though, because it sure sounds good.

Blueberry Coffee Cake I

I thought this was super! The only thing I changed was that I cut the topping in half because I used an 8" springform pan and the original amount of topping was way too much. Everyone loves it!
