Corn and Black Bean Salad

This is in our regular rotation of lunch foods. I cut the balsamic vinegar to about half of 1/4 cup because it is so pungent. Very unique flavor and healthy.

My Crab Cakes

Great! I used two 6 oz cans of lump crab meat, used one sleeve of ritz crackers. It made 6 decent sized cakes. We enjoyed them!

This dish is delicious. I brown the chicken breasts after coating with bread crumbs after reading reviews. I also sprinkle cheddar cheese or parmesan, whatever I have on hand, and broil for 5 mins. after the dish cooks. Excellent.

Marinated Flank Steak

Very good, I served beef sirloin because I wanted to make sure it would be tender. I marinated 24 hours and it was perfect. I broiled it 6 mins. on each side. Served with guacamole, homemade salsa, black beans, sour cream, and cheese for fajitas.

Joanne's Super Hero Sandwich

Delicious, my husband is a soldier and tends to need a lot of food to keep him going. I am going to put this in our rotation to pack in his lunch box. This made enough portions to pack for several days. I didn't change anything, however, I should have scooped out the bread (like the recipe says) to appreciate the taste of the rest of the sandwich. Thanks!
