Individual Baked Eggs

Great idea! I didn't add the cheese and it was still pretty good. I will make this again with different variations.

Poor Man's Shepherd's Pie

This was an easy dinner, I doubled the recipe and used 1 can cream of mushroom and 1 can cream of celery. I added 1/2 cup of milk to make it creamy. I omitted the green onions and added my own seasoning blend. I also used white long grain rice because that's all I had. The dish came out flavorful and I would make it again. The only thing I didn't like was the look of it.

Peanut Butter and Banana French Toast

This was good. I didn't have any vanilla so I used cinnamon and nutmeg. I added oven crisp bacon for a little something extra. I only used half the bannana, thinly sliced so as not to over power...It was good, and I will try it again with the vanilla and some powdered sugar.

Salisbury Steak

I made a scaled down recipe for 5 people. Used 1 pound ground beef and 1/2 pound ground pork. I omitted the tomato because I didn't have one, Used 1 egg, 1 tablespoon chopped garlic and 1/4 of a medium onion, salt and black pepper. I baked on a deep cookie sheet @350 for about 35 minutes, flipped them over halfway through. After it was fully cooked I transefered to a baking dish and covered with Pioneer brand brown gravy. Served with "Bellas rosemary red potatoes and biscuits. Yummmy!

I followed the recipe exactly and it just didn't work out for me. The meat was dry and the flavors didn't seem to mesh well together at all. I was really dissapointed because I liked the idea of it...

Best Tuna Casserole

This is the best tuna casserole I have ever made and I will make this again. I did add 1/4 cup of mayo and a 1/4 cup of milk to add a bit of creaminess to it. I didn't add cheese to the top only because I misread the directions and added it all at once with the mixture, I doubt I would have noticed the difference. I also used saltine crackers which was good but next time I will use chips just to try the difference.

Guacamole Chicken Melt

I will make this again but next time I will follow what others suggested and bake it in the oven instead of pan frying.The taste was a welcome change and I loved it with the pepperjack cheese. For the kids I used chedder because it was what I had on hand but next time I will probably use provolone. I made my guacamole simple with just avacados, garlic salt and pepper.

Cheddar Beef Enchiladas

This was a quick easy and tasty meal to make. I did make a few changes. First I used cream of jalapeño soup because it is what I had on hand, also I only used half a jar of salsa. I used a Knorr brand "Mexican rice" mix and cooked it in with the ground beef. I didn't grease my pans but I did use some of the cream sauce mixture on the bottom instead, I did not have any problems with sticking. I spread the beans on the tortilla and sprinkled cheese and the meat/rice mixture and rolled. Topped with the cream sauce and extra cheese. Baked @ 350...this came out great!

Kielbasa and Potato Bake

I thought this made for a good fast & easy dinner. I didn't use cream of mushroom but used cream of poblano instead, only because that it what I had on hand. It was flavorful and everyone liked it. I didn't give it 4 or 5 stars because although I liked it and it made for a good meal it wasn't something to jump up & down about. I will probably make it again.

Country Green Beans

YUM! I have never made fresh beans before and this recipe was super easy and came out flavorful. I didn't have any ham available so I substituted bacon instead. I followed another users advice and used chicken broth instead of water. The rest of the recipe I followed exact. My family loved this and I plan on adding this to regular dinner menu.

Zucchini Casserole

I made this scaled down for 3-4 people. I only had two zucchini's and didn't know what to do with them. I did not pre-cook them and they came out tender and not mushy. I used italian seasoned bread crumbs for a topping because it was what I had on hand. After I baked at 425 for 20 min I added 1/2 cup of mozzerella on top because I love cheese! I think it came out perfect and a great change from my plain old steamed zucchini.
