Baked Chicken and Brie

Delicious! The chicken was extra juicy and the cheese created a succulent combination. I was impressed with how easy this dish was, while the outcome made me feel like a gourmet chef! I served baked acorn squash and sauteed mushrooms and onions as sides, which complemented the dish very well.

Italian Chicken Sausage Risotto

I decided to take a stab at risotto for the first time on a whim, and this turned out delicious! I used sun-dried tomato chicken sausage from Trader Joe's instead, which gave it a very nice flavor. My husband loved it too and this will definitely be saved as a recipe to try again. One thing I would mention is that it took longer than 15 minutes for the 3 cups of chicken broth to be absorbed, and when it finally was, it was tender and creamy enough that I didn't need to add more broth.

Quinoa and Black Beans

A tasty, healthy meal that makes for great leftovers as well. It's not too spicy but still flavorful. My husband enjoyed it too, and he hadn't heard of quinoa before.

Mom's Meat Loaf

I was looking for good comfort food, and this hit the spot! I made this for both my mother and mother-in-law (to be at the time) and it was a hit on both occasions! The fresh sage and thyme really make a difference, so going fresh is worth it. I'll be sure to try it again!

Pumpkin Cookies IV

I was looking for a good gluten free dessert for my husband, and was quite disappointed. While the flavor itself was satisfactory, the texture was extremely dry and crumbly. They fall apart easily when picked up. I will not be making these again.

Quick and Easy Ham with Sweet Potatoes

This was super easy and a delicious combination! The slight changes I made included the following: 1. 1/4 cup brown sugar sounded like a lot so I cut it down to probably no more than 2 Tbsp, which was still sweet enough. 2. I only had fresh sweet potatoes so I took the advice of another reviewer and just microwaved them for 5 minutes before scooping it on top. 3. I sprinkled a little cinnamon to top it off. After baking for 25 minutes it was done. My husband loved it too, and we'll definitely be making this again!

Corn Bread Sloppy Joes

These are a yummy twist on traditional sloppy joes. My husband is gluten free so use of corn bread accommodates him, and now I don't think I'd go back to buns!

Chicken Enchiladas

These are pretty simple enchiladas that taste like you invested a lot more time. I serve them with refried beans and guacamole. These have made their way onto the list of dependable of dinners at my house!

Super Grilled Salmon

This is quite possibly the best salmon recipe I've every tried, and I've tried a lot! My husband and I both like a darker marinade and this has just the perfect blend of flavors. Even when I didn't have time to marinade it for long it was still delicious. I like being able to add the sauce when serving as well. Thanks for the recipe!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Delicious and fresh taste! Nice to find a recipe that focuses on fresh ingredients and doesn't rely on processed stuff. I just added a little sweet onion to the salsa and put the cilantro in it as well. My husband and I both enjoyed them and will again!

Homemade Apple Crumble

I haven't had great success with making gluten free desserts from scratch, but thankfully this was an exception! However, I took the advice of other reviewers and doubled the sugar and cinnamon with the apples and used browns sugar throughout. For the topping I also doubled it, but it may have been fine 1-1/2 times the recipe. For texture I used a combination of rolled oats and ground flax seed in place of the almond meal. My gluten-free husband was happy!

Lighter Lasagna

Delicious healthier take on lasagna! My husband is gluten-free, but I was fortunate enough to find brown rice lasagna noodles, and I hardly noticed a difference in taste. I followed suggestions of other reviewers and used 2 eggs instead of 1. I would suggest doubling the mozzarella cheese. I used 1-1/2 cups and 2 would have been better.

Sweet and Spicy Swiss Chard

I had never really tried Swiss chard before, and what a way to get introduced to it! The ginger really added great flavor. I used honey instead of maple syrup and it was delicious! I'll definitely be making this healthy and delicious side dish again!

Cornbread I

My husband is gluten-free and so I'm often limited when looking for good cornbread recipes. This was a good base, but I would suggest a few changes. I found this way to salty, so I cut the salt down to 1/2 tsp. I also added 1 tablespoon of sugar just to add a touch of flavor and softer crumb. Very good!

Grilled Salmon I

Very good and simple recipe. I took the advice of one reviewer and baked the salmon in a foil pocket instead of grilling. It was very moist and tender with a good flavor. I didn't have lemon pepper, so just used pepper, which was still good.
