Fast and Easy Chicken Tetrazzini

This was a good, quick and easy dish that I modified based upon what I had on hand, and I cut the recipe in half. I had fresh portabella mushrooms so I added almost a whole 10oz. package of those but left out the celery. I also added 1 large clove of garlic. I used canola oil to cook the veggies instead of butter. The milk seemed like too much so I cut that in half. I didn't have enough cheddar cheese so I substituted with Swiss for half of the cheese and sprinkled some parmesan on top before I baked it. My only disappointment was that it had too much pepper, but that may have been my own mistake when I cut the recipe down. I would make it again but leave out the pepper.

Mexican Lasagna Rollups

Delicious variation! The only changes I made involved seasoning. Instead of the taco seasoning I used 2 tsp. oregano, 1 tsp. cumin, 1/2 tsp. garlic powder and 1/4 tsp. chili powder. I chopped some fresh cilantro and sprinkled it on top with the shredded cheese. My husband loved it, and I will definitely be making this again!

Zesty Porcupine Meatballs

Quick and simple recipe with a lot of zip! My husband and I both loved the zesty taste so the worcestershire sauce was the right amount. I used regular long grain brown rice, so I cooked it beforehand, added the amount called for to the beef, and served the meatballs and sauce over the rice.

Simple Savory Quinoa

Very flavorful dish that I whipped up at the last minute. I didn't have much quinoa left and was looking for a recipe that would work well as a side dish. I didn't have chicken broth, but used water and added 3/4 tsp salt. I also didn't have celery so left that out. It certainly didn't taste like it was missing anything. I also didn't have tumeric, but going off of suggestions from other reviewers, I added 1 part cumin to 2 parts curry powder. The flavors blended very well. I also might add that I agree that cutting the oil in half is about right. I definitely will make this again!

Grilled Salmon with Peanut Hoisin Sauce

Delicious flavor! I wouldn't have thought to use this sauce for salmon but it works. My husband loved it and said it reminded him of Thai peanut sauce. We'll save the leftover sauce and maybe use it with chicken. One thing I might do differently next time is add a little more water, as it was pretty thick.

Sherry Apple Pork Chops

Very good, not quite as much of the wow factor as I expected though. I seasoned and seared the pork first, and also briefly cooked the apples with the cinnamon and sugar before putting in the baking dish. Great flavor and would make again.

Greek Slow Cooker Chicken

I love Greek seasoning and had higher hopes for this dish. It was alright, but I thought a little bland. I didn't have a lemon, but sprinkled lemon juice inside the cavity and on the outside. I used a cup of chicken broth instead of the boullion granules. I'm also concerned about the MSG in boullion. It didn't need quite that much liquid. Maybe 1/2 cup and adding a little salt would have been good. With a little tweaking, I may try it again.

Tropical Baked Bananas

Mouth-watering! Nice to have such an easy recipe to whip up to satisfy a sweeet tooth. I didn't have brown sugar, so used honey instead, and would highly recommend that. I also added an equal amount of cinnamon to cloves. Will definitely make again!

Grilled Salmon I

Very good and simple recipe. I took the advice of one reviewer and baked the salmon in a foil pocket instead of grilling. It was very moist and tender with a good flavor. I didn't have lemon pepper, so just used pepper, which was still good.

Cornbread I

My husband is gluten-free and so I'm often limited when looking for good cornbread recipes. This was a good base, but I would suggest a few changes. I found this way to salty, so I cut the salt down to 1/2 tsp. I also added 1 tablespoon of sugar just to add a touch of flavor and softer crumb. Very good!

Sweet and Spicy Swiss Chard

I had never really tried Swiss chard before, and what a way to get introduced to it! The ginger really added great flavor. I used honey instead of maple syrup and it was delicious! I'll definitely be making this healthy and delicious side dish again!

Lighter Lasagna

Delicious healthier take on lasagna! My husband is gluten-free, but I was fortunate enough to find brown rice lasagna noodles, and I hardly noticed a difference in taste. I followed suggestions of other reviewers and used 2 eggs instead of 1. I would suggest doubling the mozzarella cheese. I used 1-1/2 cups and 2 would have been better.

Homemade Apple Crumble

I haven't had great success with making gluten free desserts from scratch, but thankfully this was an exception! However, I took the advice of other reviewers and doubled the sugar and cinnamon with the apples and used browns sugar throughout. For the topping I also doubled it, but it may have been fine 1-1/2 times the recipe. For texture I used a combination of rolled oats and ground flax seed in place of the almond meal. My gluten-free husband was happy!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Delicious and fresh taste! Nice to find a recipe that focuses on fresh ingredients and doesn't rely on processed stuff. I just added a little sweet onion to the salsa and put the cilantro in it as well. My husband and I both enjoyed them and will again!
