Pesto Cheesy Chicken Rolls

This wasnt bad but it wasnt great. I followed the directions except that I put some pesto and cheese on top as well. I made this and it was easy, I liked that but while I was eating it, I wasnt looking forward to the next bite. I used jarred basil pesto, maybe that was where I went wrong. It didnt taste bad, I just felt like something was missing.

Baked Orange Roughy Italian-Style

This for me was just okay, but it wasnt the flavors I didnt like. It was the fish itself. It kind of reminded me of the fishsticks I ate growing up. I think that had I used talapia this would have been great. I followed the directions, but instead of butter, I brushed the fish with Ceasar dressing. This was really quick and easy and im looking forward to trying it with a different fish

Italian Sausage Tortellini Soup

This soup was absolutly out of this world. I followed the recipe exactly except that I used a full package of hot italian sausage, a little more tortellini (frozen), and instead of fresh tomatoes I used 2 cans of basil, garlic, and oregano diced tomatoes (drained). I will definatly be making this again :)

Grilled Shrimp Scampi

This is amazing. I make this all the time but I do a few things a little different. I dont marinate the shrimp anymore because it gives them a tough texture. I double the oil, still use one 1/4 cup lemon juice. Almost double the garlic and parsley, and I add a tablespoon of butter and about 1/4 of a cup of Parmesan cheese. Then the pepper and red pepper flakes to taste (watch out) I mix that all together in a skillet and then add my shrimp. I cook it on medium until my shrimp are pink and then I serve it over angel hair pasta. My b/f loves it! It really is amazing and the simplicity of it is great too.

Bow Ties with Sausage, Tomatoes and Cream

This was FANTASTIC. The only thing I did different from the original recipe was to use a can of Italian seasoned diced tomatoes and I used mild sausage instead of sweet.

Rosemary Ranch Chicken Kabobs

This was too sweet for me and I felt like some of the flavors clashed. I was disappointed. By the time I bought all the ingredients this was a little pricey and I just felt like my hard work didnt pay off.

Spinach Stuffed Chicken Breast

I really like this. I half way cooked the bacon like others suggested and it tunred out great. The only thing I might do differently is add a little more flavor to the filling.

Ginger Glazed Mahi Mahi

I thought this was pretty bad. It didnt cook the way it says it does and I didnt feel like the fish had any flavor. The glaze was alright but it wasnt great either. My boyfriend wasnt crazy about it either. Maybe this one just wasnt for us.

Stuffed Tomato Basil Chicken

This was AWESOME. The chicken was so moist and the flavor of the basil just spread through the chicken. The only thing was that even after turning on the broiler in the end for a few minutes, the bacon didnt cook all the way. So maybe id pre-cook the bacon.
