Mandarin Chicken Roll-Ups

What a crazy collection of fruit and veggies, and yet they work perfectly yummy together. Highly recommend this recipe! It's one of our favorites...

Jambalaya Salad

"You can make that for me every night" was my husband's comment to this meal. I did make some changes to the recipe, as I couldn't bring myself to make *cold* Jambalaya, but the base recipe seemed healthier than other Jambalayas. I also wanted to add more spice to it, so here's what I did. 1. Cook rice to taste (we used instant brown rice). 2. Chop up ham, bell pepper, celery, and tomatoes, and put them in a saucepan over medium heat. Add the bacon, shrimp, 1 1/2 teaspoons chili powder, 1/4 teaspoon hot pepper sauce and 1/4 teaspoon ground cayenne pepper. Stir well. Simmer for 3-5 minutes. 3. Add cooked rice to saucepan and stir everything together. Cover and simmer for a few more minutes. Very tasty! Thanks for the recipe!!!

Baked Sesame Chicken

My husband, who adds soy sauce to everything he eats, loved this recipe. I thought it was way too salty. If I made it again, I'd add water to the soy sauce.

Teriyaki Chicken Salad

I was excited to try this recipe because of all the rave reviews, but I ended up being very disappointed. The salad dressing was way too tangy and sour. And the chicken was nothing special. Not worth the effort. Won't make again.

This is a GREAT recipe! Healthy and very easy to make. We use brown rice with it, as it disguises the taste of it pretty well. We also chop everything up pretty small.

Blueberry Walnut Bread

Turned out similar to Banana Bread, but with Blueberries instead of Bananas. The very top middle didn't cook all the way through. Definitely let it cool in the pan before removing it!
