Zesty Slow Cooker Chicken Barbecue

This was a great recipe! Very easy, very hands off. I followed the recipe exactly (a little bit less Italian dressing). I used a value pack of chicken from Trader Joe's of 3 boneless, skinless chicken breasts with rib meat- it was roughly about 3 pounds of meat. I had to remove the tendon, but it saved me a lot of money. I cooked it on high for 3 hours, then turned it down to low for 1 hour. Then, I shredded it by pulling it apart with 2 forks and mixed it up with the sauce and kept it on warm until my guests arrived. I served it with whole wheat buns, and everyone liked it.

Stuffed Shells III

I used double the mushrooms and just sauteed some garlic in about 3 tbs of olive oil with some red pepper flakes. Instead of using a jar of sauce, I mixed the garlicky, red peppery olive in a bowl with a 28 oz can of crushed tomatos. This recipe is so delicious!! Will definitely be making again.

Flax and Sunflower Seed Bread

This bread is so filling, healthy, and delicious. Its hard to make another bread when this goes so well with jam in the morning, any kind of sandwich, or some honey as a snack.

Guacamole

Avocado, Tomato and Mango Salsa

This salsa is OUTRAGEOUSLY good. I make this all the time in the summer. I like it best with grilled chicken or pan fried and breaded haddock for tacos with some sour cream. mmmmm!

Tangy Cucumber and Avocado Salad

This is a very refreshing summer side. It is probably best over fish or tossed with lettuce. With similar ingredients, I think I would rather make an avocado/mango salsa or guacamole though.

Black-Eyed Pea Gumbo

Delicious Pumpkin Bread

I make muffins, instead of bread- 30 minutes at 350 is perfect. I also use a 1/2 recipe for everything to make about 1 muffin tin worth of muffins. I add more nuts than called for and dried cranberries, substitute 1/2 the veggie oil for applesauce, cut down the sugar to about 1 1/4 cups (for the 1/2 recipe), and add 1/3 tsp vanilla. These are delicious, moist, awesome muffins. Great for a snack or bfast with a smoothie.

Coconut Curry Tofu

This is such a delicious healthy fast recipe. I didn't have fresh ginger, so I used 1/8 tsp ginger powder and a little lemon juice to try to recreate the fresh ginger bite. It would probably be better with fresh ginger, but it was delicious this way, too. I didn't have bok choy, so I used 4 cups of baby spinach added 2 minutes before cooking time was over to wilt- DELICIOUS. I will definitely make this recipe again.

Crustless Spinach Quiche

So easy and delicious! This always satisfies me and its a great way to get spinach into my diet. I have tried this recipe in muffin form, and the quiche always sticks to the wrappers or the muffin tray. I would recommend making it in a regular glass baking dish and cutting into the size pieces you want. This recipe freezes and reheats really well, although it never lasts more than a few weeks!

Broccoli with Garlic Butter and Cashews

I used a little bit less butter than called for and didn't have cashews, so I threw in blanched almond slices instead. This was delicious! Update: I make this sauce for green beans, too, and it is super delicious on them as well. If I have less veggies than the sauce calls for, I'll use about 1 tbsp butter, 0.5 tbsp brown sugar, 1.5 tbsp soy sauce, a little rice vinegar, a clove of garlic diced, a pinch of pepper, and a drop of sesame oil. It always comes out amazing.

Quick and Easy Chicken Noodle Soup

I had a cold and don't like eating canned soups when I can avoid it. I made this, and it was very comforting and easy to eat. I didn't have any celery and used 1/3 tsp celery salt rather than fresh celery. It came out good still. Next time I would definitely use fresh celery and add about 1 tsp salt. I also pre-cooked the chicken, and I thought it was unnecessary. Throwing the raw cubed chicken in with the rest of the broth would have been just as good.

Delicious Egg Salad for Sandwiches

This is a delicious, simple recipe. I ran cold water over the eggs to cool them, but would probably leave them in the fridge overnight next time after boiling for easier peeling. I omitted the green onion and added 1 diced up stalk of celery instead. It was wonderful, and I will definitely be making this again!

Basil Tomato Soup

This is a good soup, but a little unhealthy as is. The brand of crushed tomatos is really important, also, because they carry the flavor of the soup. The first time I made this, I used Cento and either Tuttorosso or Sclafani, and it was delicious! The next time, I used Bionature, and it was much blander, and not as chunky and rich. I also used 4 tbs of butter, and thought this was more than enough. Half and half, milk, or even ricotta work well as a substitute for the heavy cream.

My Chili

This chili recipe is so good. I am not looking for another one! I did add more beans- 1 can of kidney beans, 1 can of bush's chili beans. Next time, I would even add some more, a variety of different kinds, and some corn. The longer you simmer it, the better it tastes. Cashews would be a great texture addition. This is a great recipe just the way it is, and as a base for some twists.

Penne with Spicy Vodka Tomato Cream Sauce

This is the best vodka sauce I have ever had (and I love vodka sauce)! Better than any restaurant. I will never order this out anymore, because I know I can make better at home. The red pepper adds the perfect amount of heat. I always use around 6-8 cloves garlic- but I like garlic. The 3/4 tsp salt doesn't overpower the taste, but it is unnecessary. 1/4 tsp is a good amount. If you like your sauce meaty, another link of sausage wouldn't hurt. I always finish this too fast, and would double the recipe next time for freezing.

Beef Tenderloin With Roasted Shallots

This was amazing. The sauce is delicious, and would go well over any cut of beef. I would double the sauce recipe next time- there wasn't enough of it! I only had two strips of bacon, and it turned out fine. I also used only 1.5 tbs butter, not the whole 3 tbs, and this didn't seem to affect the overall flavor either. The thyme/salt/pepper rub gave a really nice taste to the beef- really tender! This is a favorite.

Creamy Corn Chowder

YUM. I just finished my first bowl. From the other reviews and my own experience, here is what I would change. 1) 1 TBS is way too much red pepper flakes. Use 1/4-1 tsp depending on how spicy you like your food. 2) Reserve at least 4 cups of veggy and broth mix to make sure the soup has texture, unless you like soup with no chunks. 3) Saute the onions and pepper in butter or olive oil first with the red pepper flakes while the potatos are boiling, then add them to the potatos as the recipe says. 4) Make sure you buy silken tofu. Firm tofu does not work well in soups. 5) This does need something else- thyme or rosemary, or another spice of your choosing sauteed with the onion would give it a fuller flavor. 6) I would add more corn- I didn't quite think the 2 cans were enough. 7) More veggie broth (at least 3 cups) Delicious, healthy soup!
