Gourmet Sweet Potato Classic

Very well-received at thanksgiving and a welcome change-up from the marshmallow-on-top potato. Since we were serving several diabetics, I used only about a third of the sugar and used splenda brown sugar for the topping and it worked out fine. I'll be using this again!

Carrot Cake II

Great flavor, but think I will add more spices next time and some more flour as I found it a little too moist. I reduced the quantity to 6 servings and it made 12 small muffins perfect for snacks and lunches. The muffins only took 18 minutes at 350 to bake so they're ready quick! Even my toddler likes these which makes me happy.

Summer Squash Bread

Very moist with a good texture! I substituted applesauce for half the oil and it worked out great if you're trying to cut back on oil. I feel the flavor is a little bland so next time around I may add in some more seasoning or maybe nuts or a bit of brown sugar. Sweet Potato Bread

I love this bread! I had overbought on canned sweet potatoes for thanksgiving and had just enough to make this loaf. I was concerned because the dough seemed dry to me, but the bread turned out soft and moist and has a great sweet-but-not-too-sweet flavor. I subbed Splenda brown sugar for regular and next time I'd love to try whole wheat flour with it. There will definitely be many next times on this one!

Sausage Cabbage Skillet

Good quick recipe, but needed some extra flavor if you make it exactly as listed. I think next time I will try some additional seasoning and maybe a bit of liquid to keep it from getting to dry. Brown mustard and/or sour cream were great additions to the finished product. You also need to have a massive skillet. We have a really huge skillet and it still overflowed using average sized veggies. I probably had 1/4 of a cabbage I couldn't fit in.

4H Banana Bread

I've tried a lot of banana bread recipes and this is definitely the moistest I've tried and not overly dense either! I changed mine very slightly by using half all-purpose and half wheat flour and also used slightly less sugar with half white and half brown. I added a little cinnamon and nutmeg, but don't feel that's necessary if you don't prefer the cinnamon flavor. I will definitely be saving this one and making it a standby!
