Paper Salmon

Reviewed: May 22, 2010
I wish I would have cooked it a little longer, but this was the base for a wonderful anniversary dinner I made for my parents :)

Berries 'N' Cream Brownies

Reviewed: Dec. 21, 2008
Sooo easy to make, and you can keep all of the ingredients on hand if you want. Great to bring something fancy-looking and really delicious to a party, without killing yourself over it.

Marlene's Hash Brown Supreme

Reviewed: Apr. 12, 2009
This was great but I had to use way more potatoes, which may have been because I used shredded instead of cubed. I omitted the green pepper, just because I didn't have any but in the end this was spectacular.

Easy, Cheesy Zucchini Bake

Reviewed: Dec. 30, 2010
I ended up slicing the zucchini in circles, though I don't really remember why now (I think it had something to do with the shape of my baking dish) and I added onions, mushrooms and more cheese than the recipe called for and it ended up being delish!

Stuffed and Baked Tomatoes

Reviewed: Jan. 19, 2009
This was very good. I did use the smaller tomatoes I had on hand. I took some people's advice and added mozzarella cheese tot he mix. Since I had more basil on hand I used that too, and a red pepper instead of green. Brown rice instead of white was just as good and all in all this was a great and adaptable recipe.

Easy Bake Fish

Reviewed: Mar. 7, 2009
This was a very layered flavor, but I don't have much of a sweet tooth so I would cut down the honey next time. I made it with cod, cajun mustard and followed other advice and cooked it in foil for 25min at 350.

Asparagus Medallions

Reviewed: Jan. 11, 2009
This was unique despite simple ingredients, I seasoned the pork (loin chops in my case) with salt and pepper and simmered for about 45-50min, longer than recommended but I used really low heat. Make sure you get the soup on all sides of the meat, I just had it on top and it was still good but I plan to do so next time. Excellent with brown rice.

Mini Tacos

Reviewed: Dec. 31, 2009
So pretty, tasty and easy! These were better than almost any taco I've ever had. I baked the wrappers and then added all the other ingredients so that they wouldn't lose their crunch. I also used eggroll wrappers in a regular sized muffin tin and that really made for great proportions.

Meatloaf Muffins

Reviewed: Mar. 28, 2009
These were a great base! But I did cream of asparagus, added garlic, followed the recipe, and added shredded parm because I'm a cheese addict :)

Day-After-Thanksgiving Turkey Carcass Soup

Reviewed: Dec. 5, 2009
This is a great base recipe. I added a lot more variety with my vegetables and used a wild/longrain rice combo. I did have some trouble getting all the bones, but I suppose that comes with the territory.

Mom's Smoked Salmon Fried Rice

Reviewed: Apr. 18, 2009
This was perfect. I halved the recipe and added mushrooms and a dash of soy sauce and then enjoyed dinner. Thanks :)

Made it exactly to recipe, but added seasoning to the roasting vegetables. Perfection.

Chicken El Dermie Le Hermie

Reviewed: Jan. 11, 2009
This was quite good, and very easy. I sprayed it down with olive oil instead and added dried minced onion. These were notably better fresh rather than reheated.

Simple Spare Ribs

Reviewed: Dec. 4, 2008
Maybe I used a fattier version of ribs, mine were boneless but these were initially very greasy. I too used roasted garlic broth, and raw onion instead of the powder. They were much better when I had them as leftovers and was able to skim off the grease. Potentially, my problems with this recipe were all my fault, but either way it could use a little more spice.

Simple Time Pork Chops

Yummy, but kind of greasy with the bone in loins. Added several spices etc and melted the butter and mayo together as well. Will update about leftovers...

Creamy Swiss Chicken Casserole

Reviewed: Mar. 10, 2009
I won't even go into how many changes I made just based on what I did and did not have on hand. Basically, this is a great idea that will turn out good even if you do make a bunch of changes and it's nice to have such a versatile dish.

Parma Chicken

Reviewed: Jan. 4, 2009
I added garlic salt in with the cheese etc for some extra flavor, but other than that there is nothing I would have changed on this. I did pin some loose ends with tooth picks and that helped, so the cheese didn't slip out at all. Definitely recommend.

Shirred Eggs

Reviewed: Dec. 30, 2010
I didn't have any heavy cream, so I did the trick of combining milk with lemon juice and these still turned out delicious.

Chicken Wings Galore

Reviewed: Dec. 30, 2010
So good, and all things I had on hand too. I baked them on my cooling rack to try and keep them from getting soggy on the bottom, and I did flip them fairly frequently too. They took a heck of a lot longer than this says to cook, but they were sooo worth it.

Turkey Shepherd's Pie

Reviewed: Dec. 30, 2009
Very flexible, used up almost all the leftovers. I used frozen mixed veggies in one layer over the stuffing instead of separating the corn and the carrots. Plenty of room to use up whatever you have on hand.
