Tuna Melts

This was delicious. I never had tuna melts as a child because I refused to eat tuna, so I have no hand me down recipe for this. I followed this recipe to the letter (my bread was frozen anyway, so leaving it in the oven while it preheated wasn't a problem) but removed the mustard because I didn't have any and the pickles because I hate them, so this was easy to adjust to my tastes. Any recipe I can follow pretty much exactly and is really, really tasty gets a 5 from me.

Easy Cheesy Skillet Chicken

I made this with drumsticks instead of breasts, because they were what I had on hand. This was very yummy. I would like to make it on breasts next time so I could scoop up more of the sauce but this was a comfort food quality dish as I made it.

Homemade Mac and Cheese

This was good but a little bland. Somehow the breadcrumbs actually took away from the taste. I would use a spicier topping to give this a little more individuality.

Butter Beef

Awesome, awesome, awesome. So easy because these ingredients can be kept on hand frozen and nonperishable. My one caveat it that cooking it on high, even with some stirring, burnt really easily for me. I always keep what I need for this on hand for those days I wake up and realize I have no dinner, but enough time to keep on low, and it's totally worth it.

Plantation

This was great, but sat really heavy so I had a lot of leftovers. The ingredients really added up to a good ole comfort food dish, even if it was pretty dense. I like that when it's this tasty. I live alone but failed to cut this recipe so by day 5 of eating this for dinner it seemed a lot less satisfying than when I first made it.

Cheesy Baked Salmon

I really like the salmon with the cheese (I used a pizza blend instead of straight cheddar). The texture and taste of the two blended well, though I did wish I had found a way to make the fish more flavorful, the salmon was slightly overwhelmed by the cheese. Add some spice and this is a keeper.

Creamy Chicken Asparagus Casserole

I also added whole milk and a jar of mushrooms. Since I don't do nuts, I put cheddar cheese on top and lacking tarragon I used thyme, and all together it was very wonderful :)

Sole Steamed with Tomato-Leek Sauce

This was awesome. I too used canned tomatoes, which I think extended the time it took for the sauce to reduce because of the extra liquid. I also halved the herbs, as I tend to get overwhelmed by the amounts of thyme and dill people use in fish recipes. I used salmon, since that was what I had. Even with all these convenient little changes, this was a spectacular meal with the kind of creative use of leeks that I like :)

Chicken Oreganato

This was amazing. After doing the oregano, salt and pepper to taste, I added some dried minced garlic and dried minced onion and this was incredible. Also used the suggestion of cooking it skin down first and I will definitely do this again :)

Simple Spare Ribs

Maybe I used a fattier version of ribs, mine were boneless but these were initially very greasy. I too used roasted garlic broth, and raw onion instead of the powder. They were much better when I had them as leftovers and was able to skim off the grease. Potentially, my problems with this recipe were all my fault, but either way it could use a little more spice.

Avocado Shrimp Bisque

I'm not sure what happened to this dish for me, but it was really bitter when it was done. I was so excited to have a creative use to avocados, but this just didn't taste good. I'm giving it two stars becauses I'm pretty sure it was something I did wrong preparing it (any ideas?) but this was not good at all when I made it.

Artichoke Chicken

The topping was great, I added a can of mushrooms just because I like them. However, next time I make it I will cube the chicken and mix it up, casserole style. I was only dissappointed that the artichoke topping didn't cover all parts of the chicken when poured on top. Otherwise awesome.

Double Tomato Bruschetta

I made this without the sun dried tomatoes, and on flatbread, and found it to be perfect. Because I cut the sun dried tomatoes, I also cut out one of the cloves of garlic. This blend of flavors for the topping is to die for!

Beef Tenderloin in a Port Shiitake Reduction

This was great! One reccomendation is to shorten the reduction time and stir throughout, the first time I attempted this I filled the apartment with smoke but it smelled so good before it burnt that I tried again... and was glad I did.
