Dark Chocolate Cake I

I cut this recipe in half and it worked beautifully. Very moist. Paired with pie cherry filling and mounds of almond whipped cream, the cake was a hit. Thanks :)

Fresh Lime Curd

This is a great lime curd recipe (and I've tried a few). Many recipes call for egg yolks only, but this was smooth and just creamy enough. A little grated ginger adds a nice twist.

Banana Banana Bread

This is the gold standard in banana bread. Nothing fancy going here, just a classic, pure and simple. My tip: for those of you having trouble finding enough "over ripe" bananas, start a "banana bin" in the freezer, and any time you have a few old bananas laying around, toss them in. The skins will go all black, but that's okay. When you have a bunch, just defrost and you're good to go! They may weep a little liquid but I just mash it all up and it seems to turn out the same.

Addictive Sweet Potato Burritos

I made a double batch of these and instead of baking them threw them straight into the freezer. Being a student, it was the perfect solution to avoiding greasy over-priced meals at the cafeteria- it would defrost in my school bag over the course of the morning, and was ready for the microwave by lunch! Do season according to your tastes- I needed a little more kick to mine. The name is accurate, these are addictive (the flavour combination is captivating) but the texture is a little too uniform and dense to earn it a perfect rating, in my opinion. Baking them would no doubt help with this, adding a little crispness.

Golden Yam Brownies

These are so wonderful! I would never have thought to use yams in this way! I discovered this recipe when I had an excess of yams in my pantry (during the Thanksgiving season, when they are super cheap) and a craving for something sweet and healthy. I've found the recipe to be pretty forgiving to my inevitable "tweaks" like cutting the sugar a bit, increasing the yam content, or adding different spices or flavourings. Have fun with it! My only criticism would be that the "yammies" end up tasting a little startchy- probably a result of incorporating so much raw yam. You'll definitely want to use the fine shredding side of your grater- otherwise the texture is all off.

ABC (Absolute Best Chewy) Chocolate Chippers

These cookies are absolutely wonderful. I like to make them big with plenty of stuff in them. Try using some white chocolate, some dark. I usually skip the nuts but the end result is still great. Thank-you so much for this recipe!!!
