Chicken Enchiladas II

I had to change this up to suit our picky needs. I cooked chicken in crock pot all day with some beef broth, onion pdr, garlic, pdr, chili pdr, salt and pepper. Turned out delicious and super moist. I made Cream Soup Base from this site and added in 1/2 cup cream cheese along with more chili pdr, salt and pepper. Thinned out with a touch of milk. I also layed down a thin layer of taco sauce before putting the enchiladas in the pan. Awesome!!!

Super-Simple, Super-Spicy Mongolian Beef

This is a ten star in my book! Wonderful flavor and great heat. I doubled the sauce and left out the onions. I marinated for two days. Wow! Served with fried rice and baked broccoli and red peppers drizzled with a little evoo, salt and pepper. One of my favorites from this site.

Andrea's Pasta Fagioli

Really good soup. I replaced half the water with beef broth and used black beans (all I had). I put the pasta in the soup about 15 minutes before serving. No need to dirty another pan. Next time I don't think I will add all the pasta.

Pizza Dogs

I changed this up a bit with fabulous results. I cut the hot dogs in half and stuffed half of a piece of string cheese in each. Baked at 350 for about 10-15 minutes (until cheese is nice and soft). Made Exquisite Pizza Sauce to go with. After they are done baking I layer some pepperoni on bottom of bun, put hot dog on then top with the pizza sauce. Really great. Kids gotta love these. Thanks for giving me the idea!

Beef Tips

I threw it all in the crock pot except the onions and the cup of water that went with the gravy. Cooked it for six hours. I did have to thicken it up with some cornstarch and water. Served over mashed potatoes. Super good!

Too Much Chocolate Cake

I made cupcakes and did not change the recipe at all. Delicious moist cake. Super good. Took advice from another review and made Ina Gartens Peanut Butter Frosting. Wowza! Everyone loved them. Great recipe.

Limehouse Chicken

I thought this dish was great but BF did not like it. I used BLSL thin sliced breast. In place of paprika I used chili powder. Would make again for myself.

Corn on the Grill

So very good! I soaked the corn first without the silk for an hour. I'm not a huge fan of cumin so I replaced with chili powder and used Franks Hot Sauce. Wowza! The butter combination was outstanding. I didn't even have the lime. Cooked on the grill then brushed with the rest of the butter. Great recipe!

Zesty Chicken Meatloaf

Pretty good. However, if I would have baked for an hour it would have been really dry. After 40 minutes it was kinda dry but still good. Only used 1 cup of bread crumbs and used taco sauce instead of the salsa.

Super Crunch Oven Cooked Honey Dipped Wings

I used blsl chicken breast sliced in smaller pieces and they turned out great! Marinated for a full 24 hours. When assembling I realized I had no cornmeal so I had to skip it but they still turned out crispy. Used more than a tablespoon of the red pepper flakes. Crunchy and spicy. Love it!

Blueberry Zucchini Bread

Delicious moist bread. I replaced half the oil with applesauce. Next time I may add more cinnamon just because I love the flavor. Great way to use up your zucchini in a fabulous recipe.

Taco Pizza

Love the idea behind this pizza. With a few personal changes this turned out awesome for my taste. First off I used Jays pizza crust. In place of the salsa I used a mild taco sauce. Left off the onion, used way more chili pdr, used ground turkey and used way less cheese. Then I topped with shredded lettuce, green olives and avacado.

The Real Mojito

Great refreshing drink. I made simple syrup like suggested. I put everything in my shaker (except the club soda) and shook and shook. Then strained into a glass and poured the club soda on top. Then you can throw in some whole mint leaves to make this drink look super pretty. It took me three drinks to get this right! Not complaining. lol

Cheesecake Brownies

Delicious! I put the brownie mixture down, layered in a good deal of caramel (squeezable bottle) then put the cream cheese mixture on top. Swirled all together. Mmm Mmm Mmm. So good!

Crumb-Coated Chicken Thighs

Great spice mixture. I used panko breadcrumbs and added cayenne. Baked for 30 minutes and they were perfectly cooked. Love this one.

Super Spicy Pea Salad

I really love this. I wanted to make for my lunches so I added a can of chicken. I left out the onion and used red pepper. I used frozen peas and that worked great. I also used cheddar cheese. Can do just about anything to make it your own. A really great recipe.
