Grandmother's Buttermilk Cornbread

Just made this exactly as written. I used the same skillet I melted the butter in (mine is pretty huge) and I whisked everything in after. Baked in a 9X9 brownie pan for 30 minutes exactly, although next time I'll check it at 25. I also agree with other people's comments... less sugar for a savory cornbread (had the full amount of sugar with lentil soup.. it was interesting but not bad). Will make again!

Raspberry Almond Tart

Delicious! The flavors go really well together. I give it 4 because the cooking time was off (I left it in for 40 minutes) and it was very sweet.... and I cut down a bit of the sugar already. Next time, I'll use barely more than 2/3 cup. I also skipped the sugar/lemon juice sauce thing but may squeeze some lemon juice over the top next time (no sugar)... I'm not big on things that are super sweet.

Mouth-Watering Stuffed Mushrooms

Just made these... they tasted really really good.. a little spicy but good! I used only 12 stems and followed the whole recipe exactly as said except I filled more white mushrooms than 12... I didn't count them but I know I had more than 24 and I still had 1/2 the filling left over... The filling is delicious but next time, I will not use the entire 1/4 teaspoon as they were quite hot. Also, I used 2 garlic cloves...

Hot Apple Cider

I LOVE this cider. I make twice as much for my annual christmas party and it's always gone so quickly! I put the spices in coffee filter paper but didn't have anything to tie it so it all came apart and floated around... But that's okay! I fished them out after about 30-45 minutes with a strainer... the taste is still the same :) I love the cider with cookies... sweet cookies and slightly bitter cider=amazing.

Buttermilk Pancakes II

First, this batter makes WAY too much. Second, the batter doesn't spread easily. Third, and this is my own fault, DO NOT add butter immediately after melting. It cooked my eggs :-\... Anyway, they tasted alright but it was frustrating for me because it didn't spread easily at all. There are better pancake recipes I'm sure. Instead of me trying to fix this one.... I will keep looking.

Vegetarian Stuffed Peppers

Yum! I used 6 red, orange and yellow peppers (I hate green ones). They were tiny little things so I had a lot of left over filling which I will use again soon although I don't know for what. Next time i might throw in some extra cranberries and pecans. Also, I think I will put some of the tomato sauce in the filling mixture instead of spooning on top. Very good all in all :) And a little note about measuring... for the tofu, use one box cubed tofu drained... and 1 large can of tomato sauce = about 3 cups.

Baked Whole Cauliflower

Yum! Followed exactly as written... next time I will cut the margarine in half, or not use it at all, since I don't think it's necessary. Also, I added some sour cream in mine before I put the breadcrumb mixture on top so i think it'll stick well without the margarine next time, plus it's healthier.

Hot Artichoke and Spinach Dip II

I thought this was okay. I don't understand why the description says that you wouldn't even taste the artichokes because when I was through with it, we had probably twice as much artichokes as spinach. I tried following the recipe but since I was having guests over, I had to change some things. I added in some extra spinach.. and it was a bit dry so I also put in some alfredo sauce.

i added in way way way too much onion b/c i'm still a beginner and thought i could measure it with my "eye". yea, no. i put in half a red onion so don't do that! but i give it a 4 because you NEED more avocados. i used 3 and thought it could have been better with more.

Lemon Garlic Tilapia

this was very good. the lemon flavor was awesome. i didn't saute the garlic like others said and it wasn't that raw tasting. notice that the recipe says finely chopped... finely chop the garlic and you won't have to saute it b/c it will bake fine in the oven. i used fresh parsley cuz i had it for once. i give it a 4 because the timing was off. 20 minutes in and the sauce had burned (black) around the filets. the filets were still salvageable, so that was good. very good tasting though. i will make it again and again!

Brunch Scramble

Awesome! I used fresh mushrooms because I didn't have canned. I also didn't have chive so, that may make a difference. Too much salt for me, but that is an easy fix! This is a VERY quick meal. :)

Chicken Breasts with Balsamic Vinegar and Garlic

Made exactly as stated except I didn't use flour on the chicken. I wasn't impressed. Too much vinegar for me, and I don't like thyme so I will just substitute something else for it next time. Sauce is quite runny so maybe a bit of flour will make it thicker (since i omitted the flour on the chicken per previous reviews). Also, are you supposed to mince the garlic or just stick the whole clove in there? Eating a clove of garlic is not very appetizing, so next time, I'll mince it--provided that there'll be a next time.

Old Time Chicken Divan

Just made this. It tastes a little bland so next time, I'll definitely season the chicken and add a bit of garlic to the sauce. Also, there really is no point in boiling the broccoli beforehand. I used frozen broccoli florettes and they cooked just fine in the allotted time frame. If you boil the broccoli, you are cooking OUT all the benefits of the vegetable. Look at the lovely green water you are throwing away. That is were all the nutrients just went-the trash. Anyhow, I served with rice. Yummo with seasonings!
