Buttery Corn Bread

I've been searching for the perfect cornbread and this one is it! Even my husband, who doesn't like cornbread, liked it. His grandfather (who is in his 80's) told me it was the best cornbread he had ever had and he is a country boy raised on it. I did make a bunch of changes, though, in order to make it healthier. I used freshly ground whole wheat pastry flour instead of conventional white and I used about 2/3 cup sucanat (ground in the blender) instead of sugar. It took about fifteen minutes longer to cook than stated in the recipe, but that could have been due to the changes made. It was moist and flavorful. Yummy. Thanks for the recipe.

Pumpkin Chip Cookies

Wow! These were addictive. I made them with freshly ground whole wheat pastry flour and slightly less sugar than called for. I had to cook them WAY longer than stated in recipe and they were better the next day. I made them at a Christmas cookie-baking party and everyone raved about them.

Pecan Pie V

Delicious. I love pecan pie, but usually find it sickening sweet. This pie was wonderful! Not too sweet and not gooey. It also got a thumbs up from my husband's grandfather who is notoriously impossible to please. Will be making this again for Christmas!

Apple Pie by Grandma Ople

I just had a slice of this this evening after dinner. It's been three hours and I'm wondering if it is too soon to claim hunger so I can get another piece! I've made many, many apple pies- it is my favorite dessert- and this tops them all. I added nutmeg, cinnamon and vanilla. Also, I listened to the other reviewers and mixed the apples with the syrup before putting them in the pie. I served it with homemade caramel sauce and whipped cream.

Tom Ka Gai (Coconut Chicken Soup)

I'm not sure how I feel about this recipe. I didn't like it initially, but it kind of grew on me half way through the bowl. I did add sugar like some other reviewers suggested, as well as lemongrass. My husband liked it. He thought it tasted like those frito-lay hint of lime tortilla chips. I don't know if I'll make it again. It probably has nothing to do with the recipe though. I've never had the soup before in a Thai restaurant, either.

Black-Eyed Pea Gumbo

This was so good. A quick, easy and healthy weeknight meal. My two little ones loved it as well as my two young nieces. I used a fresh chopped chili pepper instead of the tomatoes with chili. I also added carrots to the dish. I topped it with some organic turkey kielbasa. Yummy! Served with cornbread it was a hearty meal.

Cinnamon Raisin Bread I

I've already made two batches of this bread. Each loaf lasts, maybe a day or two. My kids, husband, the children I babysit, friends who stop by, and myself love this bread! It is so good with toasted with butter or spread with honey and almond butter. I have adjusted the recipe a bit. I use a mix of freshly ground flours (Prairie Gold, hard red, aramanthe, quinoa and oat), plus I use two cups of raisins and up the cinnamon sugar mixture by 1/3. I also use sucanat instead of sugar. I have to take half the recipe out of my kitchen aid mixer before the kneading process begins. I knead half in the micer for 6 minutes, than take that out and do the other half. It makes three nice size loafs. I love this recipe and will be making it often.
