Authentic Pad Thai Noodles

Don't make it with vermicelli. Go for wider rice noodles so they're more like pad thai noodles from restaurants and won't break apart (also easier to eat with chop sticks). The flavor was good but I needed it punched up. Like it was pad thai flavor but the intensity wasn't there. I'd keep trying this dish, though.

Deep Dish Potato and Pumpkin Pie

Not much exciting flavor, just veggies with allspice. And I don't think the cheese adds anything flavor-wise, just extra calories. I made without crust. I wouldn't bother making this again.

Coconut Frosting and Filling

Granted, I didn't fold in my Cool Whip, but this was soupy and fell off my cupcakes. Tastes great after adding about twice as much coconut (vain attempt to thicken it), and a little coconut extract.

Amazingly Easy Irish Soda Bread

Delicious! Soft insides, just-crusty-enough outside, flaky, and just sweet enough. The only thing I'd change would be to make it into two smaller loaves because my one big loaf cooked well on the outside in the specified time but needed a good deal more time to cook the inside. I pulled off the crust that had already cooked before putting it back in the oven so it wouldn't burn, and I got a second crust from the "second baking".
