Grandma's Chocolate Zucchini Brownies

We loved this! It is more cake like but holds up well to eat with your hands - put some in the kids lunches (goes well with coffee this morning too!). I ended up putting three cups of zucchini because I over-shredded and just tossed it in. It is very thick and "pudding" like. I put it in a 9x13 pan and cooked for 30 minutes. I don't have to worry about hiding zucchini- kids will eat it - but it is not terribly visible for those who do want to hide it (chocolate covers it up). I had a ton of M & M's left over from something else so, crushed those up, sprinkled on top, for fun. When the bumper crop of zucchini rolls around every year this will be a staple!

Apple Peanut Butter Oatmeal Cookies

I thought these were just okay. To me, they were not sweet enough and lacked flavor somehow and the peanut butter seemed lost. I did love how they kept their shape. I tried on the second batch to add more sugar and even cocoa to a few but just couldn't get it right. I do appreciate the healthy aspect of them and might try them again without the peanut butter, add vanilla and more cinnamon and/or nutmeg.

Chocolate Chip Muffins

Gave it four stars because they were great after following other reviewers suggestions. Have done these a few times now for kids school. Increased milk to 1 cup, sugar to 3/4 cup and 1 cup of mini chips, 2 tbs vanilla, skipped the sugar on top. I have also replaced oil with bananas and/or applesauce with success. Does do more than 12 (I'm sure because of the increased ingredients), I got 18 nice size regular muffins and when I did mini muffins I got 38 nice size muffins. For me, baked at 375 for 18 minutes for mini muffins and 22 minutes for big ones. I like this because I usually have the ingredients on hand, it's simple and quick for kids as snacks or to take to school. Thanks Janice!

Easy Spicy Mexican-American Chicken

Awesome! I did not change a thing but increasing the amount of chicken and sauce. I put 8 small, boneless, skinless chicken thighs in an 8x8 baking dish. For the last 5 minutes or so I flipped them over to really immerse them. Paired with Mexican Rice III on allrecipes and corn cake - spectacular!

Buttermilk Cinnamon Rolls

Awesome! This is definitely a five star recipe, but I made personal changes to make it a 10 star for us! I added 1/4 cup of sugar and a tablespoon of cinnamon to the dough from another reviewers suggestion. I cook at lot but am not an experienced baker - I was nervous to make them but they were SO EASY! The one mistake I made was I melted the butter (it was in a stick in the fridge) and than mixed together the brown sugar and cinnamon with it, then spread it over the dough I had rolled out (about a 10x14 rectangle). So when I went to roll it up...it squeezed the mixter out to the end of the roll and made a huge mess (my fault!). I ended up having to scoop up the mixture that squeezed out and spooned it over the top. Next time I will take the instructions from another cinnamon roll recipe on here and use a pastry brush to brush on the butter, then just sprinkle the brown sugar and cinnamon over it. the idea to cut it with a string - genius! I put it in two round cake pans, covered in fridge over night. Took them out the next morning and let them sit for about an hour and then baked at 375 for 20 minutes. Great New Years day breakfast! Awesome!

Double Layer Pumpkin Cheesecake

Took this to church for pot luck and had everyone raving! Personally, I thought it could use more "kick" like cinamon and nutmeg, and next time will add more of that to get a more pumpkin taste. Other than that, loved it! Thank you!

Kung Pao Chicken

We've made LOTS of kung pao in our day and I loved this recipe. next time, out of personal prefernce though, I'll make more of the sauce because we like it "saucier". Great recipe! Thanks!

Award Winning Chili

The only reason I gave this four stars was becaus we made a few changes but they were for personal reasons. I consider us to be somewhat of "chili snobs". We've always just really liked our own chili recipe and may veer sometimes but always come back to it. but today we tried this and it was kick butt! I was intrigued at the steak sauce and wine addition and it has a great flavor! I gave it four stars ONLY because we like spicey chili and I threw in a lot more pepper flakes and three serrano peppers. Other than that - FAB! Thanks for opening our eyes to your great chili recipe!

Sam's Famous Carrot Cake

Absolutely amazing! I was looking for a carrot cake to take to the inlaws for Easter and not only were the *stars* rating the recipe awesome, our son's name is Sam so I had a fondness from the start. I have never been a fan of carrot cake; however everyyyybody in my husbands family loves it. when I took this I felt like a rockstar at all of the praises, oohs and ahhs :) And, it's true - it was DELISH! Thank you so much for sharing a recipe that will ALWAYS be my carrot cake staple.

Boudreaux's Zydeco Stomp Gumbo

We are huge fans of gumbo and make it 3 or 4 times a month. How I've never ran across this recipe is shocking to me - but made it last night for the first time and it rocks! Our favorite by far! Did not have red chile peppers so I used a good tablespoon of red pepper flakes and my "bunch" of fresh parsley from the store was huge and I was worried it'd be too much so I chopped up a heaping cup and that was perfect. Our guests raved and my dh and I couldn't be happier with our new favorite gumbo - affectionally called Stomp Gumbo in our house. Thanks so much for sharing!

Sausage Gravy III

This was my first attempt every at sausage gravy and I've really only made gravy a few times before this. EASY though and delish! My husband said we will NEVER buy sausage gravy in a can again and I totally agree. The second time we made it we used hot sausage and made it over biscuits with omelets for breakfast - too die for!
