Homemade Black Bean Veggie Burgers

With a few minor tweaks, this recipe is so good!! I have made this 3 times so far, each time with a few changes. I definitely agree the cumin is too much. I reduced it to 1 tsp and it seems perfect. Second, I make the whole thing in the food processor, because I'm just that lazy. I like the red bell pepper better than green in this recipe, or a mixture of both will probably be in my next batch. So I start by processing the pepper and onion in the food processor until finely chopped. I saute them with a small amount of olive oil in a non-stick pan for 2 minutes over medium heat. Meanwhile I process the garlic until it is nicely minced. Add that to the pan and saute one minute more, or until fragrant then remove from heat. I add the beans to the processor with the veggies, egg and spices, and process until blended. Then add the bread crumbs (3/4 cup as per others) and give it a few pulses. Then comes the most important part: put in a covered bowl and refrigerate at least 20 minutes. No more falling apart. I sauteed mine in a bit of olive oil for about 5 minutes each side in a non-stick pan. Topped with avocados, as others suggested. Basked in the raves. Thanks for the recipe!

Yummy Sweet Potato Casserole

This is incredible! The only change I made was to take the suggestions to roast the potatoes, which makes it even easier to make. Everything else was done according to recipe. I thought the proportion of topping was correct. Any more and it would have gone on the dessert table, but it's a matter of taste. I made this for a pot luck and it was a huge hit. Thank you for a keeper!

Cream Cheese Blueberry Pie

After reading the reviews, I took Rollins4000's advice, used 6 oz cream cheese and tried it with a shortbread crust, the "Shortbread Crust" recipe on this site submitted by Silly Rabbit, set to 6 servings for a 9 inch pie, after reading the reviews for that recipe. It was amazing... my guests raved. I also used Cool Whip in place of the whipped cream, and still got raves. For the fruit topping, I only added 1/3 the blueberries to the water/corn starch mixture, and boiled that until it was clear. Then I added the rest of the blueberries and removed it from the heat. I think this results in a much fresher-tasting blueberry topping.

Gary's Stuffed Mushrooms

This recipe is a huge hit with my family and friends. I use 1 1/2 c. Pepperidge Farm stuffing in place of Stove Top and use 1/2 the butter called for (1 stick). I use regular musrhooms and make 24 instead of 12... and these are double-bite sized portions. Of course this being Rhode Island everyone loves the crab... I wouldn't mess with that.
