Pan-fried Polenta with Corn, Kale and Goat Cheese

We cut the polenta into smaller pieces because we served it with another side dish and fish and it wouldn't been too much. Tasted great.

Shredded Potato Salmon Cakes

Left out Italian seasoning, mushrooms, and banana peppers. Used dill to season instead. A little taste of last summer with frozen salmon and garden potato.

The recipe made four lovely little dumplings. I used a very fresh egg from my chickens - not sure if that was the difference - they certainly didn't give a hint of falling apart. Instead of putting the dumplings in boiling water I put them into my bubbling soup. Could have used a little more seasoning.

Brine for Smoked Salmon

I didn't like the way this brine washed out the color of the sockeye. The brine was beautiful - looked like we should be drinking it instead of putting our fresh salmon into it. We tasted salmon that had just been marinated in a simple salt and sugar brine and liked it much more than this.
