Grandmother's Buttermilk Cornbread

I've made this twice now and we love it. I did make a few changes. I used 1/4 cup sugar (we don't like sweet cornbread) and the 2nd time I did 1 1/2 sticks of butter instead of the called for 1 stick. It was much more moist, I'll do that again next time! I also melted the butter right into a cast iron skillet and added all the ingredients directly into the cast iron and popped it into the oven. Less mess!

The Ultimate Chili

This has been our favorite chili recipe since I first found it in December of 1999. I make it every Christmas Eve! It makes the evening hassle free. I do everything pretty much to the recipe. I often forget to put the wine in and it still tastes great!

Aunt Hazel's Apple Oatmeal Cookies

These just weren't tasty at all. The flavor is severely lacking. I was going to make these for church but I will just have to let the kids eat them and buy some from the store for church. They are just bland. I even added some extra spices...

Tasty Baked Meatballs

I thought these were very tasty, however we used turkey to make them and they were so mushy. I also cut the recipe to 1 pound of meat and adjusted accordingly. I will make them again, but not with turkey. Also, with just 1 pound it served all 5 of us with some rice... so 6 servings with 3 pounds of meat would make huge servings! I'd say it feeds closer to 8 or 10.

Tortilla Chip Casserole

We liked this recipe for the most part. It was kind of bland. I did change a few things. I added a can of black beans, cut the chicken up and put the chips on top, under the cheese instead of at the bottom. It gave it a nice crispy topping. We also topped ours with sour cream and salsa. Next time I make it I will season the chicken before adding the soup mixture. I will also cut the milk down to 1/2 a cup, it was far too runny.

Baked Polenta with Fresh Tomatoes and Parmesan

I had a tube of polenta with basil and wanted to use it and tried this recipe. Like most I tweaked it a bit, mostly due to what I had on hand. I sliced the polenta and baked it, then added the tomatoes. In the meantime while it was baking I sliced up an onion and fried it with olive oil. I threw that on top of the polenta and tomatoes and added a splash of balsamic vinegar, salt and pepper. It was pretty good!
