Hash Brown and Egg Casserole

I had high hopes for this recipe, but it didn't work out for me. The only problem with it were the potatoes. After reading the reviews, I cut the amount of potatoes in half. I also browned the potatoes a bit before baking. It was like eating mashed potatoes and cheese, which is OK if you like that (I don't!). The only thing I can think of to maybe make it better is to use potato slices instead of hash browns.

Enchiladas

Other than portions, I made three modifications: I used ground turkey (85/15), I used more seasoning (pepper, seasoned salt, garlic salt) and I added a can of cream of chicken soup to the meat while simmering. It was a huge hit at my house! Prep was quick and easy, and the enchiladas were flavorful.

Slow Cooker Lasagna

It's a great hit at my home! WHAT'S DIFFERENT: I used 1.5 lbs of browned ground turkey, 15 oz ricotta, 2 cups mozzarella, and just 1 jar of pasta sauce. I mixed the ricotta, mozzarella, and parsley in a separate bowl; and layered that mixture with the meat, pasta and sauce (pasta at bottom; sauce; meat; ricotta mixture; repeat; pasta & sauce). I also lined my slow cooker with an oven bag. I set it for 10 hours on low, but it was ready in about 1.5 hours. Sprinkled Parmesan cheese on top and it is delicious! Next time, I will season the ground turkey when browning. I can't believe I found something that causes no complaints and many helpings. :)

Basic Chicken Salad

I had some leftover slow cooker chicken from the recipe here on AllRecipes.com. I used about 3 cups of that chicken (mostly breast) chopped. I also used Miracle Whip instead of mayo (just personal preference), about 3/4 cup. My almonds burned, so I left those out. I used a pre-chopped combination of celery and onions from the grocery store (to taste--about 2 tablespoons), and juice from one fresh lemon (should have used two). It seemed to need a lot of salt, pepper and the garlic powder that I added to give it flavor. It is totally yummy and very easy to make. I need easy go-to higher protein recipes, and I will definitely add this one. Try it, you will love it!

Grilled Shrimp Tacos

These were a big hit with my family. It's easy and fast to make. I'd recommend using more shrimp. We used 2 lbs for 3 people and that seemed to work. We had a bit left over for the next day.

Awesome Slow Cooker Pot Roast

INCREDIBLE!! I use beef stock instead of water. My pot roast is usually smaller (2-3 lbs), so I use just one can of cream of mushroom. The gravy is super-delicious and can be used over potatoes and vegetables. Super easy. Our family eats this once per week.

Speedy Salmon Patties

Very simple for those who are beginners, and folks in a hurry. Yummy! I used the 14.75 oz can of salmon with skin and some bones left in ('cause that's what I had on hand). I didn't use the onions, and I overdid it with the Worcestershire sauce by "estimating." I also added hot sauce to the mix. Instead of saltines, I used some Food Should Taste Good brand multi-grain tortilla chips/crackers; I don't think I used enough because the patties were still very moist and fell apart when turning. Next time, I will use the amount of Worcestershire in the recipe, and maybe add some lemon juice and/or mayo. I will definitely use more crackers/chips.
