Coconut Rice

I ended up needing to add more liquid as the rice was not done but it still turned out delicious. Served it with Japanese chicken wings and grilled veggies. Will definately make again!

Japanese Chicken Wings

These were FABULOUS!!!!! i did try something different though when i made this in order to at least try and cut some of the fat. Instead of frying the wings i simply washed them, patted them dry, seasoned and put them under the broiler. I turned them over and over again and they end up very crispy. I then drained the fat and followed by adding the sauce. With the added corn starch, the sauce ends up very thick and rich Served it with coconut rice and grilled veggies. Amazing!

Friendship Cake

This is a great cake and very easy to prepare. My kids loved it and asked me to make it again. I do think the other reviewer was correct though, this should only be cooked for about 40 minutes. I sprinkled it with a little icing sugar and had it with my afternoon coffee. Delicious!

Cheeseburger and Fries Casserole

We loved this recipe but i did make a few minor changes. I didn't have cheese soup so i just used mushroom soup and then added about 1 1/2 tbsp of processed cheese spread to it. I also added lots of garlic, onion powder,oregano, salt and pepper to the meat mixture. I also salted the fries before adding them to the top. This is a very kid friendly recipe. Just the name alone had my daughter sold. My husband agreed that i should make it again for those lazy dinner nights.

Hash Brown Casserole II

This was delicious but i do think it should be called "heart attack waiting to happen". It was so rich but thankfully it is very filling so i didn't overdue it. I did use light sour cream and reduced fat soup. I also reduced the butter slightly. The cornflakes give it a nice crunch that my daughter found appealing.

Baked Honey Mustard Chicken

This recipe was very good, but the chicken breasts i used gave off alot of water. So, before basting halfway through, i drained the liquid. I'm glad i did because it kept the sauce thick and rich. It was a nice variation from the usual.

Amusement Park Cornbread

This was a good recipe but i wish i had added the entire amount of sugar. I only added 1/3c but think it would have been that much better if i had added all of the amount called for. I also added some grated cheddar cheese in the batter which made them very tasty. I will make these again.

Bev's Orange Chicken

We didn't have pure orange juice on hand so i used 5 alive citrus. I also used roasted garlic instead of powder. It turned out great especially when u leave the chicken in long enough to let the sauce thicken. This is great accompanied with pasta as the sauce goes well with it. I do think i will add about 1/2 tsp of sugar into the sauce next time just to sweeten it up a bit. Otherwise sooooo easy and very tasty.

Special Buttercream Frosting

I liked this icing but i think i would have added a bit more of the sugar. I only added six cups and although it was rich and delicious i just wish it was sweeter. I have a sweet tooth so when i indulge...i like to indulge! It did ice my son's dinosaur cake very well and was easy to work with.

Apple-Raisin French Toast Casserole

This was a dish i served at Easter brunch. Everyone thought it was delicious but i think i might have preferred it if i had put the apple mixture on top. It might have helped with making the bread more flavourful and moist. I found that some of the apples were stuck on the bottom despite my spraying the pan very well with cooking spray. All in all though, I think it was a hit and i will make it again in the future.

Bacon Cheeseburger Pasta

This was really delicious but i agree that it would be pretty average without the bbq sauce. I also added some frozen peas to it as a way of making sure my children had their veggies. They loved it and so did my husband. Simple and satisfying!

Slow Cooker Taco Soup

I was wary about this recipe simply because i didn't know if it would be too spicy for my four year old. But it was a big hit with her as well as my husband. I did add about a teaspoon of sugar to the soup in order to cut the tanginess of the tomatoes and i added extra corn. The chips and sour cream really make this dish. My daughter even said "i wish i could eat this forever!"

Elvis Presley Cake

My mom loves "the king" so i decided to make this cake for her birthday dinner. She loved it as did all of the guests. I did think it might be too sweet so i only used one cup of sugar with the pineapple and only about 3 cups of the icing sugar in the cream cheese mixture. I also decided to sprinkle the walnuts on the cake instead of mixing it in the icing. It made spreading the icing much easier and the presentation was very pretty.

Caribbean Coconut Chicken

This has to be one of my very favourite recipes from this website. I did take the advice of other reviewer's and used the whole can of coconut milk and after i transferred the chicken and peppers into the 9x13 i kept the sauce in the pan and thickened it slightly with some corn starch. I also rubbed the chicken with some roasted garlic and salt and pepper prior to browning the meat. The flavours were delicious and my company raved about it. I will definately serve this again.

Salisbury Steak

Although this recipe tasted delicious, it was not very appealing in its presentation. Both times i have made this the patties fell apart and crumbled into a bit of a mess. Nonetheless, it was tasty and my husband loved it. I will make again , however i will not be serving this to company.

Curried Microwaved Chicken

I made this recipe but decided to make it on the stove top and not in the microwave. I cooked the onion, curry, apple, paprika, butter and chicken all together and seasoned it with salt and pepper. Once the chicken was nearly done, i added some sweet green peas, the soup, milk (instead of thick cream) and a bit of water. I let this cook on medium for some time to reduce the liquid and let it thicken. It turned out absolutely delicious and i served it over penne. My husband and 4 year old thought it was great. Probably was alot more difficult than in the microwave....but i wanted the meat to be browned. I will make this again.

Beef Tips

This was a delicious meal and my 4 year old loved it. I did take the advice of others and did reduce the soya sauce and omitted the salt. I also used roasted garlic instead of garlic powder. The meat turned out tender and the sauce was thick and rich. A definate keeper.

Swiss Chicken Casserole I

This was an excellent recipe that took very little time with regards to prep work. The only thing i was unsire of was whether to use the seasoning mix that is included in the box of stuffing. So i sprinkled a bit it over the dry bread crumbs and it turned out great. I will make this again. We loved the swiss cheese too!!
