Chewy Chocolate Chip Oatmeal Cookies

Chicken Enchiladas II

Delish!! I made a few changes though. I did not add the green chilies as i wanted my kids to actually eat it. Also, i had less chicken so i used some black beans and kidney beans, garlic, fresh chopped tomatoe, and diced red pepper. I added lots of seasonings, and used the sauce as listed in the recipe. My family enjoyed this so much. I will be making this again.

Baked Beef Stew

This was soooo good. Such great comfort food. I used corn starch as the thickening agent and cooked it at 325 for 3 hours. Used canned beef stock and a little extra water, as well as some minced garlic while i browned the beef. Such a great meal, with fresh 12 grain loaf.

Danish Meatballs with Dill Sauce

This was fantastic. I loved the flavour. I ommitted pouring the butter over the meatballs, and used garlic and herb chicken stock. Added some fresh black pepper and served it over steamed brown rice with grilled veggies. My family loved it.

Millionaire's Cake

I would have given it 3 stars but my company loved it and had seconds. I think the problem for me is that it wasnt sweet enough. When i indulge in dessert i like to go for all the calories and sweetness. They all raved about how light it was though and kept saying it was very delicious.

Apple Rosemary Pork Tenderloin

This was pretty good, but i like a few of my other tenderloin recipes better. Our family loved pork chops/roasts with chunky homemade apple sauce, and this definately did not compare. It was still moist though and quite flavourful. Maybe if i had better flavoured apples. I will try this again during apple season when i can get them straight from the orchard.

Spaghetti Pie III

Although this certainly not gourmet, it is a nice easy dish that can be made ahead of time. My kids loved this, and i was thrilled that my son liked it as he had given up on pasta with red sauce. I seasoned my sauce with lots of oregano, fresh garlic, italian seasoning. The only change i made, was that i didnt add the green onion. Served it with ceasar salad and garlic bread and it was a hit. I will make this again for sure.

Slow Cooker Chicken and Dumplings

Wow, this was good. I really liked this recipe and its simplicity. I did make a few changes though. I added garlic-4 cloves, fresh ground pepper, and oregano. I used one can of cream of chicken, and one can of chicken broth, and a small amount of water. I did not want the sauce to be too watery so it worked out perfectly. I loved the texture of the biscuits when they were cooked. Yummmmmy!

Slow Cooker Cranberry Roast

This was pretty good but i think i will use a different cut of meat next time. While the meat was flavourful, it was dry which i think has little to do with the recipe. Base don other reviews, and the reported sweetness of the gravy, i made mine slightly different. I strained the sauce then put it on the stove adding 1/2 cup of warm water with corn starch. This thickened nicely and was slightly sweet but not overpowering. I will try this again for sure.

Chinese Fried Noodles

This was really good. Nothing fancy but still very good. My kids love these noodles and it went well with lemon chicken tenders from this site. I was very careful to make sure i didnt overcook the noodles as i didnt want them to stick together during the drying process. Yummy!

Lemon Chicken Tenders

My husband is west indian and loves curry but i dont make it for him very often. These tenders turned out great and the curry added to the flavour of the sauce. Based on everyone's reviews, i reduced the sugar and thickened the sauce. It was delicious. I love that the chicken did not need to be fried in oil. My kids loved it and my husband asked me to make this again. Oh by the way, i had alot left over so decided to make lemon tender wraps the next day. A small amount of lettuce mayo, bean sprouts and diced tomatoe, and wow my family loved them.

Creamy Potato Lasagna

This really is not lasagna in texture..i mean we are working with potatoes. I really did love it though.I cant say enough good things about this. Such warm comfort food. I think the results vary depending on the quality of sauce you use. I used an amazing sauce, added some fresh garlic,fresh brocolli flowerets, an italian blend cheese and onion powder. My family loved this meal, and i will definately make it again.

Easy Morning Glory Muffins

Yesss! These are amazing. My daughter and i wanted to bake some muffins for my father. Morning Glory's are my dad's favourite so we gave these a try. I loved that it made 12 large bakery sized muffins that came out very moist and flavourful. I used my hand chopper for the apple and carrot, which took no time at all. I think the grating would have been tedious. I will be making these again. My son loved them and he hates carrots and raisins!

Penne and Vodka Sauce

Phenomonal recipe. I made this for company and they raved. I had never worked with Pancetta, and am glad i found it at the market. It really does add something to this dish. So smooth and rich, great combo with the fresh bread, and apple avocado salad with tangerine dressing as well from this site. Finale was pineapple pie from this site as well. Definately a 5 star meal all the way.

Apple Avocado Salad with Tangerine Dressing

I love this salad. My company loved this salad. The only thing i did differently was not to juice the mandarin oranges. I used canned mandarins and purreed them in my hand chopper. Tasted delicious in the salad. Also added 1 tsp of honey to the dressing. Great flavour combo's in this salad.

Basic Flaky Pie Crust

I am not overly experienced with making pie crusts, so i ended up needing to do this twice. First time i refrigerated the dough. Found it worked better the second time wheni omitted this step. Dough was much more pliable. I took someone else's idea and rolled the dough out between wax paper. It worked really well and did not toughen the texture of the dough. Once i got the hang of it, the second time around was much better. The end result was flaky and melt in your mouth,
