About this Cook
I am married and have 2 fabulous kids. I enjoy cooking as a hobbie and don't see it as a chore. In fact, besides spending time with my kids....it is one of the funnest things to look forward to in my day.
My favorite things to cook
I love cooking classic comfort type meals for my family as well as gourmet when i am entertaining. I love italian food, baking, salads and sidedishes. I also like trying new flavour combinations.
My favorite family cooking traditions
Cooking is a passion of my mother's so i come by it honestly. She went to cooking school for many years so i remember spending many hours along side her in the kitchen.
My cooking triumphs
Anything that makes my guests, family and friends say MMMMM.
My cooking tragedies
Once i made a spinach and mozarella stuffed meatloaf that was big enough to serve a group home of 15. As i brought it ouit of the oven, i dropped it and it smashed all over the floor.

Chewy Chocolate Chip Oatmeal Cookies
Absolutely delicious, soft and chewy in the centre and golden brown. Both kids and husband loved them.

Pineapple Cheese Casserole
This is so simple to make and so delicious with ham. I made it for our Thanksgiving dinner and it was a huge hit.

Chicken Enchiladas II
Delish!! I made a few changes though. I did not add the green chilies as i wanted my kids to actually eat it. Also, i had less chicken so i used some black beans and kidney beans, garlic, fresh chopped tomatoe, and diced red pepper. I added lots of seasonings, and used the sauce as listed in the recipe. My family enjoyed this so much. I will be making this again.
