Refreshing Summer Orzo Salad

What a refreshing salad!I too omitted the capers (personal preference) and used plain feta. I didn't toss the orzo with butter after I cooked it and had no problems with it sticking. Per other reviewers suggestions, I dry toasted the pine nuts. Be careful when preparing the garlic. Mine burned the first time, good thing I had extra! I prepared mine early in the morning and served it later in the day. I did have to add a very small amount of additional olive oil (about a tbs) because the pasta seemed to have soaked it up (maybe because I omitted the butter?) The flavors and texture were absolutely delicious! I might try fresh herbs next time. Thank you for a wonderful recipe. I will definitely be making this again.

Easy Cheesy Chicken I

As per another reviewer, this is great in enchiladas! I added a small can of chopped green chili for a little extra kick.

Spinach Chicken Parmesan

My family loved this. Not only delicious, but a nice presentation as well. The only change I made was to add some salt, pepper, & garlic to the spinach mixture for a little more flavor. I also substituted chopped red pepper for the pimentos which I sauteed w/ the onion. Thanks for a great recipe. I can't wait to have company over and serve this for dinner!

Sloppy Joes II

I've never been a big fan of sloppy joes, but my family loves them. This recipe changed my opinion. They were great! Next time I'll probably reduce the sugar a little and maybe add some Worcestershire for a little kick. I did end up adding a small amount of water (about 1/4cup) as it simmered in order to make them a little more saucy. Thanks for a great recipe!
