Bourbon Slush

I dislike it when people review a recipe and say how they made changes to it....lol well I am breaking my rule...this was great except for two things: (1) it made way too much - enough if you are having a party, but too much if its just 4 people one night, I will halve it next time, and (2) it was way too sweet - I will try cutting the sugar back or eliminating it all together, the OJ concentrate is super sweet enough and adding sprite too compounds the sugar. But loved the bourbon citrus taste and best of all it was nice and cool on a hot 4th of July

Irish Soda Bread

I looked at all the other Irish Soda Bread recipes here and decided on this one. I made 3 loaves over the week and all 3 came out perfect. Very simple, very tasty and what I would call a very traditional Irish Soda Bread. I, like another reviewer, used my kitchenaide mixer with the dough hook, on low, and continually scraped the bowl. I also basted the bread with a mixture of buttermilke and melted butter throughout the baking process.

The Best Thai Coconut Soup

the title of the recipe says it all. It is the best. Only tweaking we did was add a little more curry paste (because we like it spicier) and instead of lemongrass which I couldnt find that day at local stores - I added about about 2 tsp of lemongrass paste/gel - this can usually be found in produce section around the containers of fresh herbs. I froze leftover soup, and when reheating, added some fresh mizuna leaves to give it extra texture and punch.

Rum or Bourbon Balls

This is the very same recipe I have used for years! My advice though, put the balls in an airtight container for a few days before serving or handing out for gifts to allow time for the bourbon to mellow. I like to use Jim Beam.

Peanut Butter Vegetable Chicken Soup

OMG this was a surprise - it was incredibly delish!!!! And we know our soups, we do a soup nite one nite a week, have been for about 9 years since Tues nites were usually a kid activity night. This was simple to make - although I did the prep (except the potatoes) the night before. Next time I might add just a squeeze of lime juice and some chopped cilantro to give it a thai twist.
