Baked Ham

Reviewed: Feb. 25, 2003
I used my Nesco 18 quart cooker to make a whole ham leg [21 lbs]. I put the ham on the rack, added enough water to cover the bottom, and used a mustard glaze instead of the brown sugar one. It smelled heavenly while it was cooking and when done, was so good!!! The ham wasn't dry or overcooked, just wonderful!!! Thank you for the recipe!

Vidalia Heaven

Reviewed: Dec. 30, 2002
Wow!! I didn't have a vidalia or even better a Texas 1015 onion on hand, so I just used a generic yellow onion. I followed the advice of another poster and used good balsamic vinegar instead of butter because we were going to have mushrooms sauted in butter w/ our grilled ribeyes. I also added minced garlic w/ the beef cube because nothing is done w/o garlic! Ha! Ha! I double foiled it so no juice would leak. It was heavenly!!! Thanks for the recipe.

Green Turkey and Cheese

Reviewed: Dec. 3, 2002
I used this recipe as starting place. I first tried it almost as written. I felt the raw spinach should have been precooked and drained before adding to the dish, as I found it was not done while the cheese was rubbery and overcooked. I also added a layer of leftover dressing on the bottom. That did soak up the liguid from the spinach. Even w/ the faults listed, my family liked the dish. I decided to do it again, this time, doing a layer of dressing, smashed spuds, precooked spinach, chopped turkey and salt, pepper and garlic powder. I baked it for 20 minutes and then added the cheese and cooked until it melted. It was very, very good! I will keep messing w/ it but it's a good start!

This makes a smaller loaf. I didn't have oat bran, so I used toasted wheat germ. I also didn't have caroway seed, so I substituted fennel seed. It turned out GREAT!!! The whole family loved it. Thank you for awonderful recipe!

Cheesy Potato and Corn Chowder

Reviewed: Dec. 12, 2001
This chowder is GREAT!! I followed the directions pretty closely, which I normally don't do. The only thing I changed: I substituted ham broth/ soup base for the chicken broth and I added real bacon bits along w/ chopt green onions to the top!I didn't have the mexi velveeta so I used the regular kind. I, like another reviewer, wasn't sure I wanted to use processed cheese, but it was great!!! My whole family loved it-which seldom happens!! I will keep coming back to this recipe. It is easy to make changes according to what you have on hand!!! Thank you for sharing! Cheryl

My Best Beef Brisket

Reviewed: Sep. 30, 2001
I changed this recipe to cook in a crockpot. Use well trimmed brisket or you will have WAY too much fat!! I followed most of the ingredients, but I added Dried onion soup mixes {2}, water to come half up to the meat, and Worstershire sauce. I cooked on high 4 hours and low for as long as everyone got home!!! {3 to 5 hrs} After eating some sliced meat with our dinner, I put the pot in the fridge. The next morning I skimmed all the fat off the top. Later, I also added stew vegies to the liquid {along w/ chopped meat that was left} in order to use everything!!! My whole family loved it!!

Easy and Delicious Chicken

Reviewed: Sep. 16, 2001
I made this w/ homemade dressing and I added a sliced onion which I cooked on low for 3 hrs. I drained it and added 1 can Herbed cr. of chick soup, an 8 oz. can of mushrooms w/ liquid, 1 teas. chick. soup base, and the 8 oz. cream cheese. FANTASTIC!!! Serve over rice {I like Jasmine or Basmati} or noodles!! I made my dressing using garlic red wine vinegar...
