Pumpkin Cookies VI

I made these for my son's school. I loved them - they were soft, chewy, not the least bit rubbery. I made them plain, with raisins and with chocolate chips. I also used the serving conversion to take it to 100 servings, instead of 24. It turned out great. They spread nicely, and had a smooth surface like a regular cookie, rather than a bumpy surface as shown in the photo, or like some cake-like cookies tend to have. YUM!

First - I don't understand the posts about adding the egg to the sauce. It's supposed to go into the meat - when/where/how do you add egg to the sauce, and what is it supposed to do if you add that? Puff up or something? Okay...strike one - this dish could have been an utter disaster. I sliced eggplant thin - and was baking it as some recommended. Unfortunately, my thin, delicate slices stuck to the pan (yes, I had oiled them), and then ended up crisping too much (I forgot them...duh). So I sliced up potatoes instead. I knew some versions (and some mentioned here) that you also use potatoes. Strike 2 - I didn't realize until too late, I had no parmesan cheese. Used mozzarella instead. Strike 3 - what is "fines seasoning?" I used Italian. With all that being said.........my kids LOVED it. My daughter wants to take some for lunch tomorrow. I will try again with proper ingredients next time, and probably add more tomato sauce and wine to the meat (I may have had more than one pound, and it was kind of dry by the time it simmered down). YUM!

Prune and Olive Chicken

very delicious - and smells great when marinating. I made this for a teacher's luncheon. Surely not their usual fare for teacher's luncheons! They loved it. I made it that night for my family. It was great, but kids were reluctant to eat the prunes - not the most appealing appearance. I will make it again, though, for sure.

Zucchini Brownies

My KIDS love these brownies. 'nough said! I LOVE brownies. Most homemade brownies can't compare to the many boxed varieties I have tried. THIS one came close. I have done it three times now - and the first two times I added an egg because the batter was litterally crumbly before adding the zucchini. The third time, I added egg with the sugar, and then I added in zucchini before dry ingredients. This made for a much smoother batter. The egg makes it more cake-like, I believe. I'll have to brave it next time and make it without. I really LOVE these brownies! Make sure you chop the zucchini enough - otherwise the kids complain about them being stringy. If chopped well, you can't even tell it's in there. And the ICING - LOVE IT. The kids ask me to make the icing for other treats that would use chocolate frosting/icing. Kids love it, parents love it, neighbors love it. Hats off to the person who came up with this one - it's a real winner!

Apple-Raspberry Crisp

I only used one large granny smith apple. I also used two pints of fresh dorman red raspberries, and about 1 1/2 cupst of frozen rhubarb chunks. Everything else I kept pretty much the same as the recipe. I did add a bit more oats, because once you add the melted butter, it's mush, not crumble for the topping. Adding more dry oats helped it crumble and spread over the top more evenly. My family LOVED this. From a 19 month old up to my 10 year old, and my dad who was visiting. We served it warm with vanilla ice cream. A BIG hit. The kids asked me to make it again!!!
