10 Pound Cheesecake

DELICIOUS!! i subbed 1/2 c skim milk and 1 regular sized package of cheesecake pudding for 1 of the sweetened condensed milks. for the bottom i used 2 whole packages of graham crackers. then i made individual "cupcake cheesecakes" by placing cupcake papers in a muffin pan, 1 Tbs of graham filling, then a smaller ice cream scoop of cheesecake filling and 3 canned cherries from cherry pie filling on a total of 36 cupcakes. to save on space in the fridge, i pulled them out of the 12 count tin with a fork outside of the paper and lifted it into a 9x13 pan with a cover. it fits 18 with space on the side. then place the remaining graham crumbs in a 9" square, the remaining cheesecake filling over that, spread it out. then for the top, mixed a package of no sugar black cherry jello dissolved with 1 c. boiling water and then mix that with a can of lemon pie filling. spread it over the cheesecake filling. cover and let sit and set in fridge.

SO YUMMY!! just a note about the peanut butter. make sure you use regular peanut butter. if you use the natural peanut butter, it's too dry and it will sieze up on you and you have a fine batch of peanut butter taffy :O).

Baked Beef Stew

excellent! meat was very tender...although i didn't have tapioca. instead i seasoned the meat w/ salt and pepper, then rolled it in cornstarch and browned it. it won't get as thick as it would with tapicoa, but it makes a decent substitute.

Layered Dulce de Leche Dessert

Fantastic and easy! In order to make them for a HS graduation for my cousin, I made them in an aluminum-lined cupcake wrapper. For 1 recipe of the jello filling, it makes exactly 17 of them and since they freeze before serving, making them ahead of time is wonderful. To make sure I portioned out the jello correctly, I used a medium size scoop/portion tool (it's like a mini ice-cream scoop). Fabulous, thanks you so much!

Black Forest Cake II

SO AWESOMELY YUMMY! I made it for a contractor friend at work for her birthday today. I replaced the butter w/ canola oil and the milk for 1 can of diet cream soda (I have a dairy allergy). It was SO MOIST and PERFECT! Thank you SO MUCH for sharing a WONDERFUL chocolate cake recipe!!
