Belle's Cheesy Potato Stoup

Reviewed: Dec. 7, 2011
a great recipe to build on. I also didnt have onion soup, so I used mushroom and it came out very yummy. I fried up the spam first for some crunch and also added a couple tablespoons of dried, minced onion, garlic and lots of seasoning salt and fresh ground pepper for flavor. cant even tell that the spam is not ham or bacon!

Beef/Mushroom Pockets

Reviewed: Jan. 20, 2010
LOVED this! I like to use less prepared foods to avoid all the unnecessary preservative and additives, so I used homemade pizza dough and fresh mushrooms, garlic and milk with cornstarch instead of cream of mushroom soup. I liked the idea of peas in it too, but only had frozen peas and carrot and it turned out great with nice color and flavor! Might try frozen spinach next time. Also did dough in triangles instead of circles to make them more like turnovers. Also, they freeze great! Will make this again and again - even my picky toddlers enjoyed them!

Fresh Pear Cake

Reviewed: Sep. 10, 2010
I followed some advice of others and halfed the spices, added ginger, allowed the spices to sit with the sugar and pears for the hour and then used two eggs instead of 4 whites and baked it a little under time - it came out perfectly moist, evenly spiced with wonderful pear flavor! just what an early fall evening ordered!

PHILLY Creamy Basil and Red Pepper Pasta

Reviewed: Sep. 10, 2009
a great starter recipe, I love this! I made just a few changes...added fresh, minced garlic, parsley and red onion as well as chopped fresh tomatoes to the blender mix. I also used whole milk and regular cream cheese to make the sauce more decadent. And finally, I poured the sause and chix over linguine...very tasty! 125 grams is half a package of 8 oz cream cheese.

Bacon Cheese Muffins

fantastic breakfast alternative to sweet muffins! i followed the review about adding extra cheese (maybe 3 cups?), omitted the lemon pepper and salt in exchange for seasoning salt, added some dried, minced onions and put cheese and bacon on the tops for looks. reheats well, too!

Chocolate Truffle Cookies

Reviewed: May 21, 2010
the best chocolate fudge cookies. batter tastes just like brownie batter, so I bet would taste great as brownies as well. when I first made these, I did not have bakers chocolate on hand, so on the heels of another's review that it worked okay with additional chocolate chips, I tried that. They came out really good, but when I made them the next time, I really saw the difference in using the bakers chocolate and TOTALLY worth the trip to the grocery store for it. They set much better and taste more triple chocolatey and less bitter-sweet, if that makes any sense. Also, roll them in powdered sugar for a beautiful look! I cannot wait to try the other suggestions of peanut butter, white chocolate or butterscotch chips!

Nacho Cheese Sauce

Reviewed: Aug. 21, 2009
the consistency is great for easy nachos. a little bland without an extra spice, so I recomend the jalepenos, green chilis or 1/4 cup of el tapatio or tabasco sauce to give it a slight kick. very popular with the kids...even our toddler!

Blueberry Snow

Reviewed: Apr. 8, 2009
I found it was even better to mix the pieces of angel food cake into the rest of the mix. And in a pinch, a jar of any flavor of jam worked great in place of the blueberry filling and sugar!

Toffee Bars by EAGLE BRAND®

Reviewed: Apr. 19, 2010
this is the exact recipe that I have been trying to get from a friend but always forget to ask. A couple things to remember, though...the milk does NOT take 15 minutes, more like 5 and to keep the chocolate flavor from overwhelming it, I like to just sprinkle the chips, keeping their shape and not spread them. Thank you Eagle!

fantastic twist on baking powder biscuits and just what I was looking for in a crescent without yeast! I used margarine instead of shortning because I think all biscuits are better this way and used the powdered buttermilk with water and they turned out fantastic! thanks so much!

Peanut Butter Chicken Skewers

Reviewed: May 6, 2010
loved this recipe! was looking for a recipe that a long-lost friend used with thighs and wings and thought I would try this. Worked amazing! I doubled the recipe and simered the sauce as directled and then poured it over two cut up, whole chicken and let simmer for hours in a crock pot until the chicken fell off the bone and then served with rice. AWESOME!

Sweet Corn Cake

Reviewed: Jun. 2, 2011
very good. a little sweet for us. decided to sub masa for cornmeal for an all-masa cake, which gave it nice, smoothness and flavor. also in true "Nourishing Traditions" fashion, I soaked the flour in milk and water first. Amazing! And LOVED the real corn in it!

Summer Garden Pasta

Reviewed: Jul. 27, 2011
I thought it was a bit bland as well, so to give it more flavor, I cooked some bacon and then chicken breast. Then I sauteed onion, the garlic, zuchini and squash in the bacon grease very lightly before tossing it with the noodles, tomatoes, parmesian, cut up chicken and crushed bacon. To make it a little cheesier I added about 1/2 cup of chopped mozzerella and for zest chopped fresh thyme, basil, sage and parsley...awesome hot summer dinner with plenty of leftovers for lunch the next dday!
