Beaker's Vegetable Barley Soup

This soup turned out really well. My husband has asked for it twice since last week. I would have given it 5 stars but i made a few changes to suit. Like a previous reviewer, I did not have curry so i used 1/4 tsp each of chili powder and crushed red pepper. I also used organic vegetable broth and 1 cup of brown rice instead of barley. It has a thicker consistency, more like a stew but it is wonderful. Thanks for a great recipe!

Thanksgiving Meatloaf

I gave this 4 stars because i changed recipe, but it was very good with changes. I followed some changes as per previous reviewers and did as follows. I used a microplane and grated up 1 carrot, 1 celery stalk and half an onion with roughly 2 tsps of minced garlic. I used 1 1/4 lbs. of ground turkey and half of 6 oz. chicken stuffing prepared. With that I added about 2-3 good shakes of thyme, rosemary, marjoram and S&P. Mixed all together along with 1 egg beaten and 2 tbsp and 2 tsp of milk. I lined a cookie sheet with foil and down the center of a cooling rack also foiled I just cut some slits down the foiled rack. I freeformed a loaf shape onto the foiled rack and i added the remaining stuffing mix to the top of loaf. I baked at 350 for about 75 minutes and served along with some roasted garlic mash and steamed string beans with an onion gravy. It was delicious!!

Debdoozie's Blue Ribbon Chili

I have made this a few times now and I pretty much follow this recipe as is. I crack the pepper right in the mix i dont measure.. My husband really like his food hot and spicy and he was really pleased. Also made this for company and got rave reviews all around. I make this with cornbread and add some fresh cut chives and shredded cheese on top before serving. Thanks for a great recipe!

Chicken Piccata II

I made this as part of a menu for a party, scaling to serve 20. I followe otehr reviewers' suggestions.. flour mix then egg then flour again, sitting on fridge for 30 minutes before frying in olive oil. I also cut breasts in half length and then in half in width to make medallions. I made these earlier in the day so I fried the chicken then set aside and made the sauce later on before the party. I didnt make the with as much lemon as called for because i used fresh squeezed and simmered the sauce with cut lemon slices instead. It was a big hit! I used this along with the Herbed rice pilaf recipe also from this site. Thank you for a great addition!

Chicken Noodle Soup

I have made this a number of times and it is great,last night it was for my sick husband. I used 8 cups of swanson reduced sodium chicken broth with 4 cups of water. I also added a can of cream of chicken along with some minced garlic and a little oregano. At the end I used fresh chopped parsley and some sliced green onion. Served along with some bisquick biscuits and he was a happy camper!

Broccoli Beef Stir-Fry

I gave this 4 stars because of the changes i made but i great starting point. First off, I did not have any peas on hand and i made this recipe much larger. I sliced a large onion, julienned some baby carrots and sliced red pepper. I doubled the sauce and used a bag of steamfresh broccoli which i added at the end. I also added a splash of the beef broth to the water for the rice. Next time, I will actually triple the sauce becuase i added so many more vegetables. I will also try rice wine vinegar as a previous reviewer had mentioned and also as mentioned you should drain the beef before adding the other ingredients. Overall, it was very good and will make this again.

Basil Chicken over Angel Hair

I made this last night with just a few modifications. I used 1 can of diced tomatoes with the juice (hubby is not a big fan of tomatoes). I also used whole wheat thin spaghetti and i eyeball most of the other measurements. I added crushed black pepper and that was it. It was very tasty and even the tomato stubborn hubby went back and finished it off.. so much for leftovers for lunch today!

Crispy Rosemary Chicken and Fries

This was really tasty although i did make a few changes but just on the cooking side. I put the potatoes in the oven first for 15 minutes before the chicken. I did cook them on a cookie sheet with a cooling rack. Then added the chicken. I was worried about drying but over all they potatoes were crunchy and the chicken did not dry out. We are having this again and will cook the same way.

American Lasagna

I made this for palm sunday dinner and it was awesome. I even got rave reviews from all the crabs in my family! The only changes I made were the parsley (only had dried) and i used a airbake pan to prevent burning, I also did a thin layer of the sauce mixture on the pan so the noodles wouldnt stick.
