Clark's Quiche

Reviewed: Feb. 2, 2012
This was the best quiche I've ever had - and I actually made it from scratch! I substituted 1/2 sharp cheddar and 1/2 swiss and also used fresh spinach-- as some other reviewers recommended. I sprayed my pie pans with nonstick cooking spray and baked the crusts for 8 min. before adding filling. My mistake, though, was leaving the pie dough a bit too thick (more than 1/4 inch) and it made the crust kind of dry. I covered the edges of the pie crust with a ring of aluminum foil to keep the sides from getting too brown. My boyfriend ate over half of one pie at once -definitely 5 starts!

Urban Legend Chocolate Chip Cookies

Reviewed: Nov. 11, 2010
I followed the recipe carefully, though usually I just "wing it". But, the cookies turned out blah. The dough itself stayed together nicely and looked pretty, but they didn't have much taste. Sooo disappointing because I craved Choc Chip Cookies! I'll stick w/ toll house.

Perfect Apple Pie

Reviewed: Jul. 12, 2010
My boyfriend loves apple pie. I made a similar recipe to this one and it came out watery and soggy (even after baking it 20 min longer than directed). So, I was determined to try again and salvage my dignity! This recipe turned out much better with the following adjustments: I added almost 3/4 cup flour, substituted 1/2 dark brown sugar, and added 2 more T of butter. It looks beautiful, is not too sweet and ISN'T soggy.

Oatmeal Chocolate Chip Cookies III

Reviewed: Sep. 10, 2009
I JUST made these. Some are still in the oven! I'm not a big fan of oatmeal but made them for my boyfriend. Even I like them, though. I did add 1/2 c more flour, a full tsp of soda, (as recommended by other reviewers) but kept the salt as the recipe calls. I subbed 1 c sweet choc chips. I did chill them 30 min and didn't flatten them on the sheet w/ a fork. They turned out very good, maybe a little bit dry because of the extra flour. Oh, and I baked them at 325 for 10 - 11 min. Take them out before they are too brown on top to keep them chewy. Thanks for the great recipe!

Slow Cooker German-Style Pork Roast with Sauerkraut and Potatoes

Reviewed: Aug. 27, 2009
I love this stuff! I've also added two peeled, sliced apples (they mix in w/ the potatoes so it doesn't taste "appley" plus 1 or 2 T brown sugar to soften the tartness of the sourkraut. And 2 bayleaves. Sometimes I add small chunks (1 inch) too to add a different flavor. My family gobbles this up - and it's EASY.

Chocolate Toffee Crunch Bars

Reviewed: Jul. 25, 2009
Oops! Help! I loved these last time I made them. But, this time, I could not get the butter and brown sugar to "melt." It stayed gritty. I had water boiling for pasta on the stove and it was a very hot day. Could that have anything to do with it? I cooked the mix for longer than 1 min, but it started to scorch and still wasn't melty. They were still delicious, however!

Campbell's® Cheesy Chicken and Rice Casserole

Reviewed: May 19, 2009
This recipe is simple and tasty - like the other reviewers commented. I made it substituting chicken broth and minute rice and when it was done, it seemed very bland. I added chicken flavoring and sharp cheese to add some flavor. I definitely will make this again - but I will brown the chicken w/ spices and maybe a small amt of chopped onion. If I feel wild, I may saute the veggies a bit w/ spices as well.
