Boilermaker Tailgate Chili
Don't know how anyone could call this dissapointing...I've been making it for two years now and it is to die for...especially as leftovers...last time we made it we ate ours every night for a week and did not get tired of it (that's saying something for me).
Changes that helped:
-You pretty much always need more beer...add to taste and make sure its a strong beer. I usually end up using a full cup
-Its never very spicy prepared as directed...but I never use chili beans in spicy sauce (can't find) but it tastes delish when you use about one chopped jalapeno (instead of 2 green chlis) and about 2 peppers in adobo sauce (in can) this gives it a smoky chipotle like flavor...
-mix the types o beans...we often use both kideny and white beans....makes it prettier (and tastier I think)
-I usually don't bother with bacon bits and it doesn't need them...its such a complex tasting chili as it is!!
-Don't waste this by putting it on fritos...but do get an AMAZING VERY SHARP cheddar to put on top...compliments it amazingly...
-Make sure you season to taste...I always add a little bit more salt, pepper or sugar etc to get the perfect balance...trust your taste buds but also know that after 1 day in the fridge the flavors will meld and be much much better than the day you made it...
You can also make this with ground turkey and turkey sausage which tastes the same to me and is healthier!
Serve this with Cornbread, beer and sharp sharp cheddar...it's TO DIE FOR...
