Carrot Cake III

My most 'food' critical friend only complained that I didn't serve him a large enough piece! He also changed his birithday cake from a double chocolate bavarian cream cake to this! That's a winner in my books!

Restaurant-Quality Maple Oatmeal Scones

Awesome! The pregnant ladies in my bible study loved these! The only alterations I made were due to lack of ingredients on my end: regular syrup for maple syrup, almond extract for maple extract, cranberries & raisins for cherries... I also turned my heat down to 375 (like ya'll said) and put them in for 15 minutes.

Over the Top Nachos

I took the advice of taco seasoning and heating the refried beans for better spreadability. My younger sister wanted to try something different, so we used the scoops instead of the flat tortilla chips. While it was beastly to spread the beans on, it made this a mess-less finger food!

McCormick® Stuffed French Toast

Awesome! I used strawberry instead of apricot for the filling and I didn't let it sit for two minutes on the each side. It was more like 45 seconds each and I made sure to line the sides with the french toast mixture (as a sealant). No syrup desired or required! Simply excellent!

Peanut Butter Easter Eggs

I live in Korea with a homestay family and the kids LOVED this explosion of sugar and taste! Nothing like straight Western sugar-coma to help them out!^^ I added vanilla and made about half of them white chocolate eggs. Instead of shortening (which doesn't exist here) I used simple butter and it was fine.

I used this as a springboard and added frozen bananas and strawberries, carmel instead of chocolate, and yogurt instead of milk. Tasted awesome! 5 stars!

Cinnamon Rolls I

I had to add MUCH more flour than it called for because the dough was so sticky before kneading! It also didn't rise like I thought it would, but it was Korea-OK'd by the family as a slightly sweet breakfast or snack.^^
