About this Cook
I love to eat, hence I love to cook! I am also a homeschooling mom of three girls. Teaching my girls to eat healthy, stay fit, and take care of the body God gave them is so important to me.
My favorite things to cook
Mexican foods and sweets are what I mostly enjoy cooking. But I love trying new dishes that appeal to my taste buds. I like to try out new ways of making old favorites to make them healthier for our family.
My favorite family cooking traditions
Having my children pull up a stool and help me bake or cook warms my heart. I loved cooking with my mom and my friend Angie when I was younger. Sharing cooking with my girls is so much fun & is making great memories for them!
My cooking triumphs
Whenever someone tells me how much they enjoy what I make, it is so encouraging! My extended family tells me I should start my own bakery. They love my birthday cakes which I bake and decorate on my own with homemade icing. How sweet they are!
My cooking tragedies
I always burn the bread! I don't know how but I always do. My husband is so sweet; he says he likes it that way.

Authentic Enchiladas Verdes
This recipe is amazing! About 10 years ago I studied abroad in Cuernavaca and ate enchiladas verdes at a restaurant in Mexico City. Ever since, I have been looking for a recipe to come close to that wonderful dish. This is it! Homemade enchiladas verdes have become a favorite at our house. I frequently make it when we have friends over for a meal too, and everyone loves it. The recipe is perfect. My only suggestion is double or triple the amount of sauce you make because you are going to want more of this tasty Mexican dish again soon & making more to freeze will save you the effort next time. Que rica!

Shrimp and Asparagus
I made this recipe tonight following the advice of previous reviewers. I lessened the amount of olive oil and butter, thickened the sauce, used thin spaghetti noodles, and I also juiced a whole lemon. The flavor was amazing! My 9 year old said, "Wow, mom! This tastes like it came from a restaurant!" My 7 year old was indifferent as she is with most foods. My 5 year old said, "I like McDonald's better." Well, I guess you can't please everyone all of the time, but I think this recipe is a definite keeper!

Easy Morning Glory Muffins
I LOVE these muffins!! I have made them twice now trying whole wheat flour and buckwheat flour and raw sugar to make them a bit more healthy. I love knowing that my family is eating something good for them that really tastes great! These muffins will be a regular in my house!
