Simple Swiss Chard
I threw in 3/4 can of kidney beans and used Newman's Own Light Balsamic salad dressing in lieu of the straight balsamic. Throw on some Adobo seasoning. Yummy! (Sauteed the chard stalks first and then threw in the leaves.)

Refried Beans Without the Refry
I made this recipe in a pressure cooker. It took about 30 minutes. Just throw everything in the pressure cooker (with about 1 inch of water OVER the height of the beans), once the pressure cooker 'needle' goes up, cook for 30 minutes. Let cool. Drain. Throw the cooked bean, onions, etc. into a food processor, add spices to your liking. Next time I'll add more jalepenos as my husband thought it needed more 'kick.' Oh- I also used pinto beans that I soaked overnight in water. FOLLOW UP: Maybe cooking the beans for 8 hours was the way to go... the pressure cooked refried beans will continue to remind you and anyone in your vicinity that you recently ate beans. Toot-toot!!!
