Simple Whole Wheat Bread

I had never made "real" bread before, but was attracted to this recipe because it's been called a very forgiving recipe. I followed it exactly and it was the most delicious bread I've ever had in my life. I am definitely hooked. Thanks Nita for giving us this recipe!

Poached Salmon with Cucumber-Dill Sauce

I made this recipe for my parents, who are following the South Beach diet. I have never made poached salmon before and the recipe was surprisingly easy (after tracking down the ingredients, which took some time). I could not find vegetable bouillon and I don't eat meat (except for fish) so I substituted Veg-it seasoning for the chicken bouillon the recipe actually calls for. The salmon was perfectly tender and delicious, and the sauce was an interesting accompaniment. I am sure this salmon has much less fat than my traditional method of broiling it in an olive oil/chili powder rub, but it was not nearly as tasty as that method either, so I can only give it three stars. I was still hungry after dinner.

Cheese Enchiladas

I modified this recipe a little bit to accommodate ingredients I had on hand. I thought the end result would suffer, but it was fantastic! I had no creole seasoning, so I added fresh garlic and basil to the sauce. I added spinach to the cheese filling. They were so delicious. I will be making these many times more.

Chewy Granola Bars

These were good, but I think they can be improved. I made them using about 3/4 cup of butter and 3/4 cup honey, as some had suggested (due to crumbliness), but they were extremely sweet and much more like cookies than granola bars. I put in half chocolate chips and half craisins. Next time I make them I will try substituting applesauce for some or all of the honey. This is definitely a recipe worth some experimentation.

Addictive Sweet Potato Burritos

This recipe was delicious and wonderfully different. I used black beans instead of kidney, otherwise followed recipe exactly. I would definitely make them again. Everyone loved them except my 3-year-old, who took one bite and spit it out, but this was not surprising.

Taste of Home's Pasta Primavera

I modified this recipe a little bit to make it healthier: I put in two carrots, one tomato and a red bell pepper. I steamed the veggies before adding the sauce, then used half the amount of soup the recipe asked for and added 1/2 cup of rice milk. The result was delicious -- definitely a keeper!

Anna's Chocolate Chip Cookies

I compared this recipe to the Toll House one and there are some differences. More flour, and the sugar/granulated sugar ratio is different. I thought these cookies were cakier than Toll House. I loved them.

Chewy Peanut Butter Chocolate Chip Cookies

These cookies were very good, solid and chunky. They are the closest I've come to creating upscale bakery-quality cookies. I made them for my mother's birthday. Thanks for the great recipe.

Vegetarian Sandwich Spread

I had some problems with this recipe. I couldn't find a can of vegetarian hot dogs, so I bought the packaged kind. They don't mash up easily even when put in the blender. After adding the other ingredients I still had a chunky spread that did not adhere to my bread. The taste is good, though. It's not smooth enough for my baby to eat, so I can't rate it kid-friendly.

Fresh Asparagus Soup
