About this Cook
I'm an (unemployed) Elementary Art teacher and currently working on my Masters in Visual Arts education. I'm working part-time as a graduate assistant at a state university in NY while finishing up my research. I live a bit of a (modern) nomadic life and tend to move at least once a year. Who knows where I'll end up next!
My favorite things to cook
I love to bake, but don't do it so often since my egg allergy gets progressively worse. I love to cook meals from scratch as often as possible.
My favorite family cooking traditions
Every Christmas, since 1996, two of my sisters and I make trays of Christmas cookies for friends and family. We set aside an entire weekend, dubbed "Cookie Weekend," for our endeavors. We shop on Friday, bake on Saturday and decorate on Sunday. There are some years when we have made over 15 different types of cookies and bars and over 1200 cookies! Our favorite part is admiring the trays when they are all completed. As you can imagine, after such an intense, sugar and butter filled weekend, we rarely ever eat the goodies.
My cooking triumphs
Anytime I successfully manage to pare down recipes to serve 1 or 2.

Basil-Lime Sorbet
Delicious! We have a plethora of basil this summer, and made this on a whim. So glad I did! I followed the recipe exactly, and I was thrilled with the results. The only problem I have with this recipe is that it takes much longer than two hours for the sorbet to initially freeze, which wasn't a big deal for me. I can't wait to make this again. Next I'll be trying a lemon-lime basil sorbet. Great recipe, thanks!

Chewy Peanut Butter Chocolate Chip Cookies
This cookies are great! Unlike other reviewers, when I made these, they spread beautifully during baking. As a result, my cookies were nice and big (and soft and chewy). I did substitute honey for the corn syrup since I didn't have any. I also loaded these babies up with chocolate chunks and chips (about 3 cups). I think I would like a little more of a peanut butter taste, but overall, these cookies were fabulous!

Berry Good Coffee Cake
If your looking for a traditional coffee cake type recipe, this is probably not for you. I really loved this coffee cake because it wasn't overly sweet and "cakey" like some coffee cakes can be. I didn't have any raspberries on hand so I substituted with frozen peaches and strawberries and absolutely LOVED it. I also subbed Greek yogurt for regular. I panicked a little when it came time to "pour" the batter because my batter was far from "pourable". Instead I used a greased spoon to spread it in the pan. I was surprised by how moist and springy the cake was (if you're concerned about it being TOO soggy, try reducing the amount of sugar added to the berries as this produces quite a bit of liquid). I can't wait to try this again with different fruit combinations!
