Sweet Corn Muffins

These came out great using vegetable oil in place of the shortening! I tried it based on a review that mentioned canola oil, because I don't like to use shortening since it is hydrogenated (trans fat). I was very happy with the texture as well as the sweetness. I was looking for a somewhat sweet muffin for breakfast and used the whole cup of sugar which was definitely not too sweet--just right. Also, my muffins baked for about 30 mins. Overall very easy recipe and very delicious!

Potato Crunchy Tenders

Although I don't require a gluten free diet, this is an awesome gluten free option that I will tell my sister about. You'd never know it wasn't breadcrumbs--except that it tastes much better! (Only change I made was to add garlic powder since I didn't have garlic potatoes, only butter flavor).

Tuna Buns

Normally I don't like sweet relish but used it anyway and I'm glad I did! These were wonderful! Oh, didn't have an onion but used green onion, and only had american cheese on hand.

Baked Potato Skins

Wow the brushed-on oil mix made these so fantastic and I never would have thought to do it on my own! I used olive oil instead of vegetable oil but no other changes. These were awesome!

Ricotta Cookies III

I was surprised by how soft and cake-like these were! My husband and I love them! The only changes I made were to the icing: I used 2 tsp butter rather than a tsp each butter and shortening, and I sub'd almond extract for the lemon out of personal preference.

Fluffy Pancakes

Wow these pancakes cook up to the PERFECT texture--fluffy yes, but not too airy. I found them to be so satisfying for breakfast this morning! (And I love that I always have all the ingredients on hand anyway so I can just spontaneously cook them whenever!)

Thanksgiving Flavored Turkey Burgers

Yum! These tasted just the way I imagined they would and hoped they would. Unfortunately I am on a temporary dairy-free diet so I sauteed the onions/celery in oil and replaced the cream cheese with mayo. It was still great but I look forward to trying this again when I can enjoy the butter and cream cheese! What a great idea for something different for dinner!

Lemon Square Bars

I made this recipe as written, except that I didn't melt the butter for the crust, I put the crust ingredients in the food processor and pulsed. At first bite I said 'Whoa, these are too sweet!' But by the time I finished my piece I wanted another one. My husband and father-in-law both ate two pieces and liked them. I think the powdered sugar I dusted over the top was not necessary; if you do this, go easy with the stuff. They were very easy to make, enjoy them.

Tina's Greek Stuffed Peppers

My husband loves Greek food so I thought he would love this, but when I asked his input he suggested rating it only 4 stars! His reason was now that he has been eating goat cheese rather than feta on his salads everyday, he has developed a preference for goat cheese and didn't care for the feta. I prefer feta and think most people do, so I won't deduct a star for that! I absolutely LOVED this so I overruled and gave it 5 stars. Also, I normally don't eat lamb because I didn't think I liked it, but I DID use it in this and it was awesome! Don't automatically substitute beef if you're not familiar with lamb! Try it in this recipe, the flavors go great together!

Zucchini Bars

I made these exactly as written (which was in error, as I intended to lessen the oil per the advice of some reviewers) and I agreed that they were too oily. I did wring out the excess liquid in the zucchini and I also had to cook them for about 35 minutes; the middle jiggled like jello at 25 min. But they taste really yummy! So my husband and I decided to rate them at 4 stars.

Spicy Sweet Potato Chips

I halved the cayenne and thought that was a good heat level; any hotter and it would have been too much. I think those who enjoy their food spicy would be ok, but my hubby and I agreed that 1/8 tsp was good.

Spinach Stuffed Chicken Breasts

This was awesome. My husband and I loved it and he asked that I make it on a regular basis. The only changes I made were to use prosciutto not bacon, and I seasoned the chicken with garlic powder, onion powder and pepper--but there was so much flavor that I bet it would have been great even without the seasonings. Easy Cream Cheese Danish

Mmm these were great! I did the same as lots of people said and used the dental floss to slice the dough into rounds, pressed the center and filled with the cream cheese mixture. I baked for 15 mins and the thin ones were a bit too dark but the thicker ones were perfect. (I intended to slice them all the same but I'm just not that talented). After they baked I topped half of them with raspberry pie filling but there wasn't much room to put it! Gave them a great flavor though. Now will have to make them again because there is so much leftover cream cheese filling and pie filling!!

American Lasagna

Oatmeal Fruit Cookies

Mmm these were wonderful! Sadly I didn't have dates on hand so I had to leave them out. I will definitely add them next time but if you don't have them either don't let it stop you from making these. They were enjoyed by all who tried them and got rave reviews from my husband and his coworkers!

Make Ahead Lunch Wraps

These were awesome! I took the idea from another reviewer to add onion and red pepper and since I didn't have pinto beans I left them out. Honestly I liked this better just eaten out of a bowl as I did for lunch right after making it but the rest went into wraps and that does make it very convenient to take to work. Thank you for a delicious and healthy recipe!

Chicken Pot Pie IX

This got the highest praise of all: my husband who is normally very critical of my cooking said that he could eat it every day! AND had NO suggestions for how it could be better, which is very rare. Yay! The only changes I made to the recipe were to cook the veggies/chicken in however much broth was left in the box after measuring what I needed for the recipe + water to cover, didn't have celery so used one red potato and didn't have celery seed so used garlic powder. Oh I also added some McCormick Rotisserie Chicken seasoning. I loved it as well!!
