Chocolate Buttermilk Layer Cake

This cake recipe taste almost like devil's food cake. It was chocolatey but not too much chocolate. It was very moist. I used this recipe for my mother-in-law's birthday cake, and she loved it. I was using this cake recipe for a decorating project, so I did not use any of the candy on the cake. Other than the omission of candy, I followed the recipe without changed. I didn't have buttermilk on hand, so I put in a Tablespoon and a teaspoon of vinegar to regular milk. I will definitely make this again.

Chef John's Buttermilk Biscuits

These came out perfect! They were buttery, fluffy, yet crispy on the outside and perfect in the inside. I forgot that I was out of baking soda, so I just threw in some more baking powder.

To Die For Blueberry Muffins

I have made it as is, with and without the topping, and with my own changes. Personally, I don't think it needs topping at all. They are plenty sweet without it. I also add some cinnamon into the batter, instead of oil, I use butter, and I sometimes use half whole wheat flour and half oat flour. My four year-old actually likes the taste better when I don't use all purpose flour!

Heavenly White Cake

Mine came out a little bit dry, but I believe that I over baked it a little bit. It still had a good taste and with good frosting, you wouldn't really care it it were a little dry. My only dislike about the recipe is that it is time consuming because of having to sift the flour so many times and if you are not taking your time with making sure you do not get any yolk or water into your egg whites, they won't whip! I had to start my egg whites over because of this. Instead of beating my eggs in, I too, folded them in. Next time I might try the suggestions of adding just a little more milk as well. If you take your time, you will have a great cake. If this is something you want to make on the fly, you may want to consider something else.

Buttercream Icing

I made a double batch for a large scale baking project. I have used all butter recipes for buttercream before and it's just too sweet. That is why I picked this one to try. I didn't wind up adding as much milk for a double batch. I also did half vanilla and half almond extract because I didn't want the taste of vanilla to be too strong either. I used this for both spreading and piping and it was fine. I also find that if you sift the confectioner's sugar before you mix it, it gives a smoother consistency. I used this recipe to frost some cupcakes and a small 9" cake for my son's 4th birthday. He liked them just fine! It goes well with the heavenly white cake recipe!

Chocolate Cupcakes

It' okay. I too, thought that it was impossible to cream only 3 tablespoons of butter with that much sugar, so I added a little more butter. I also thought that the batter was a little too thick, so I added a little bit more milk. Having done that, I just barely squeezed out 2 dozen cupcakes. They tasted fine to me. They were some quick cupcakes to bring to my son's school the next day for his birthday. Most kids who like chocolate don't care if it's low fat or not, as long as they taste like chocolate, and it does.

No Knead Beer Bread

I followed this recipe pretty much exactly. I used bread machine yeast (as that is all I use) and it was fine. I live in a warm climate year round, so getting it to rise was not a problem! I also used a bottle of Sam Adams seasonal Christmas beer that my husband never got around to drinking. It turned out great. I brought it to a gathering with some friends and everyone loved it. I served it with some Brie and other cheeses. It was such a hit that people thought I worked really hard on it and all I did was put together a few simple ingredients.

Burger or Hot Dog Buns

They turned out tasting just like a regular commercially produced hotdog bun. Mine didn't brown as nicely as I wanted them to though. They also were harder to shape than the video makes them out to be. I made 8 large hot dog buns rather than the recommended 12.

World's Best Lasagna

My husband loved it, as well as his fellow co-workers on his boat. I did tweak this though. I added much much more amount of seasonings. I find that most recipes are too conservatives with seasoning. I used 2lbs of grass-fed beef and drained it instead of using sausage and beef and was also very generous with the cheese. I used shredded cheese instead of slicing it. The recipe also seems weird in that is calls for 12 noodles, but to then arrange 6 of them length wise into a 9x13 pan. There is no way 6 noodles will fit in that arrangement. Even if it did, it would then only make 2 layers. It's a good recipe, but should be tweaked to your own tastes.

Basic Corn Muffins

I turned these muffins into breakfast by adding cooked sausage and cheese! I'm pretty sure that this recipe is the same one on the back of a cornmeal bag, but nonetheless it turned tasty and was a quick way to make something a little different for breakfast.

Broccoli Ham Ring

As is, I don't like it. I think it is a good base for you to tweak it in a way you DO like it though. I like to use colby jack cheese instead of swiss. I've made it with the green onion and with regular onions before. I like the taste of regular. I also didn't notice much difference between fresh and dried parsley. I also like to put in about 4oz of cream cheese in addition to the cheese already called for. I forgot that I had run out of dijon mustard, so I used some homemade mustard I had in the refrigerator that had a spicy kick to it. The last thing I did was instead of making it a ring, I just made it a straight braided log. I did this mostly because making a circle is a lot harder and I don't like extra effort. I brought this to a couple of different parties and it is a hit every time. My husband likes it so much that I am forced to come to the party with a piece missing because my husband will steal a slice before I leave.

Jay's Signature Pizza Crust

I made this tonight without alteration. The dough itself turned out well. I sometimes do not have success with dough. The taste though, was a bit bland though. My husband enjoys flavorful crust and this didn't have it. I made this into two pizzas. I made a small one for my son and one for the Mommy and Daddy because my son likes plain old boring pizza and we don't. I wanted this crust to be thinner, as well. Next time I will add herbs and seasonings to the crust and discard a portion of the dough so my crust can come out thinner next time. All in all, this recipe yielded a nice dough and wasn't hard to work with, but the flavor is only 'meh.'

Biscotti

Mine turned out great! I don't like the taste of anise, so I used 1/2 tsp vanilla extract and 1/2 tsp almond extract. What I enjoyed most about this recipe is that the dough is stiff enough where you don't need to refrigerate it before baking it. I'm impatient, so this works out well for me. I also like that this recipe is a good base, so you can customize your biscotti by adding in whatever you want. I'm keeping this recipe. My husband, who I make the biscotti for likes it and that is all that matters!

Red, White and Blue Strawberry Shortcake

I was looking to make a quick dessert and I happened to have all these things on hand! All my guests thought the flag was adorable, and devoured it, but I personally thought it was missing just a little something, although I cannot think of what that something is. It tasted good, in the future I will make my own cake batter. I don't like box cake.

Buttermilk Biscuits I

I suppose if I used self rising flower, they might have been better. I only had bisquick on hand and I really needed to use my buttermilk. (it was fresh that I had from making butter) I cut recipe in half and used 2tsp of baking powder b/c Bisquick already has a leavening agent in it. I used a whole tablespoon of sugar and a cup of buttermilk and followed the rest of the directions the same. I normally follow recipes as written before I review them, but in case youaree in a pinch like I was, then you should still get good results. It's still not quite what I am looking for in a biscuit, but better than any I have done so far. Oh and they taste even better with my fresh made whipped butter on top!

Molasses Sugar Cookies

They were alright. The flavor was nice and spicy because I added extra. When I read to put in 2tsp of baking soda I knew it sounded weird. My cookies came out flat. I have never ever had a flat cookie before. I'll try these again next time only 1tsp baking soda.

Mom's Best Waffles

I would say that this was pretty marginal. I did not add all the milk that this recipe called for. It seemed like it was too thin that way. Other than that, I made it as is. Next time I make waffles, I'm going to maybe add some more sugar or some cinnamon with it to make it a bit sweeter, although waffles aren't really meant to be anything more than crispy pancakes. (in my opinion)

Streusel Topped Blueberry Muffins

I've used this recipe twice now. Both times my husband asked if he could eat more than one. He normally takes whatever I bake to work and he doesn't have to beg anyone to take them off his hands. The muffins themselves are pretty basic. I think it's the topping that makes it oh so good.

Miracle Baking Powder Pie Crust

This might be because I'm still a novice at making my own pie crusts, but I found the dough needing more water than what the recipe said. When the dough finally blended, it also felt harder to roll out than normal. I don't know how it tastes yet but it looked very nice when I took my pie out of the oven. I'll be sure to edit my comment when I do. It might not be the recipe, perhaps operator error. I'll try it again just to be sure next time I make a pie.

Plain Cake Doughnuts

I thought this recipe was fine as is. They remninded me very much of the dougnuts that my mom made when I was a kid. I'd never made doughnuts before and these were easy and took no time at all. I did the same in rolling mine in cinnamon and sugar when they cooled off. If you are looking for a PLAIN recipe, then this is a good one to start with.
