Asian Roll Lettuce Wrap

very very tasty recipe!!! I have wanted to do make lettuce wraps at home for a little while now and originally made this for our family Valentine’s Day dinner. BIG HIT! I opted not to add the sugar to the sauce and used water chestnuts in place of the radishes as we forgot them when we went shopping :-) I made up a larger batch if the sauce - because I follow a gluten free diet I used Braggs Amino Acids instead of “Soy Sauce” – same great taste but good for you - and reserved most to add to the ground turkey meat that I browned instead of making the meatballs. After browning the meat, I added the shredded carrots, chestnuts, and sliced green onions, cooked brown rice, and some of the reserved sauce. I let it all cook together for a little longer on the stove top – melding the flavors to one another. FANTASTIC!!! I have made this dish twice now and can see this one becoming a regular family favorite!!!

Roasted Pork Loin

This was my first roasted pork loin and found the recipe super user friendly!!! The taste was PERFECT with the pork. I forgot to use the wine – opps – but it still turned out so delicious! Everyone LOVED it! (thank goodness for a few pieces of leftovers) I used my mini food processor to make the paste, I just it all in and added some olive oil to help it along and then rubbed it in and on the loin!!! NOMNOM we will for sure be adding this to our list of good ones!!!

Mixed Greens Salad with Tarragon Dressing

Super yummy recipe! I LOVED LOVED this dressing!!! I made this for Mother’ Day dinner and everyone really enjoyed it! I didn’t have tarragon vinegar so I used basil and oregano rice vinegar, also used olive oil and not canola and omitted the toasted sesame seeds by accident…all in all a great way to jazz up a nice green salad - I used a package of herb greens - nomnom!!!

Laura's Lemon Roasted Potatoes

What a great way to do potatoes!! I made this dish for Mother’s Day dinner and for sure didn’t make enough as people wanted more!!! They turned out great!! I used olive oil instead of canola and butter. I also used red potatoes and left the skins on! Shared the oven with pork loin so cooked roasted them at 350 instead…turned out wonderful!! Will for sure be adding this to the more often used stack :)

Melissa's Turkey Meatloaf

this was a very good turkey meatloaf! Since I have intolerances to gluten, dairy, eggs, and wheat I did change it up some. I put some regular oatmeal (not quick oats) in my food processor and used that instead of bread crumbs, I omitted the milk completely, and I added 1 tbsp flax meal soaked in 3 tbsp hot water as egg substitute. I also omitted the parmesan cheese. I added some rosemary and thyme to the herb mix and sued ketchup on top. All in all this meatloaf was loaded with flavor, I especially loved the celery and onion in it, rough chopped for texture…my family loved it!

Pomegranate Feta Salad with Lemon Dijon Vinaigrette

wonderful salad!!! I made this for a large family holiday gathering and there wasn't a leaf left over!!! great blend of fresh ingredients. I did adjust the dressing as I made it, tasted and added what I thought it needed to be a bit more balanced. Also added chopped candied walnuts for a little extra crunch!!! I will make this again and again!

Quinoa Side Dish

This is possibly the best quinoa dish I've tasted and made yet! The fresh herbs really add such a great flavor and my family gobbles it up...usually with no leftovers. I now make this at least once a week and have made a double batch for lunches. Tastes great as a cold side as well!! (btw I used a shallot instead of onion and opted to not use any extra salt)
