No Bake Chocolate Oat Bars

I think I'm in love. I cut back a bit on the butter as suggested by others. I also used natural peanut butter and they're still fabulous! These are not going to last long.....

Banana and Black Bean Saute

This intrigued me, I had all the ingredients and gave it a try. My rating is closer to 3 1/2-4 stars. I used the entire can of coconut milk and the whole thing turned out very soupy and runny so I'll cut that back next time. I served over brown basmati rice and the dish kind of felt like a breakfast porridge. I liked the taste and may just eat it for breakfast!

Roasted Tomato Curry Soup

Loved it! I didn't have any saffron and added a pinch of turmeric like the previous reviewer. I also doubled it and even so, it didn't yield a lot.

Quinoa and Black Beans

This didn't quite turn out as well for me as it did for other reviewers. I found it bland and may up the spices next time. I think I undercooked the quinoa because it was a bit mushy for me. I also found 1 can of beans to be plenty.

Sweet Potato and Carrot Soup with Cardamom

Simple and flavourful...comfort food at its best! I sauteed garlic with the onion and as others suggested decreased the cardamom just a bit.

Besan (Gram Flour) Halwa

I had some leftover chickpea flour from making Nan Khatai and decided to try this...I'm not familiar with this type of Halwa, so it was a new experience! I substituted butter (not quite sure how much I used) because I didn't have ghee. I may have needed more...the flour mixture was very lumpy so I added a bit of oil. Since I don't know what this is supposed to be like, I'm not sure if it turned out...what I do know is that the cardamom flavour was wonderful, and I really enjoyed this sweet treat!

Chewy Maple Cookies

I wss getting bored of my usual chocolate chip and oatmeal cookies and decided to give these a try. They were wonderful! Definately very sweet, so I cut back on on sugar a bit and used walnuts instead of the coconut. Totally addictive!

Baba Ghanoush

I'm not sure what happened, but this didn't turn out for me at all. It tasted like bland eggplant pablum and not at all like restaurant baba ghanoush. I may try the alternate roasting methods posted by other reviewers for a deeper flavor. It was edible but not great.

Chocolate Chip Banana Bread II

I halved the recipe...not enough bananas! This browned very quickly on top and I was worried I'd have mush inside and a burned top. I remembered a suggestion from another recipe to cover the top with foil half-way through baking. I think this saved my "bread"....but who are we kidding--isn't it cake? :-)

Pumpkin Pie Bread

I loved this bread! It was my first time making pumpkin bread and it turned out beautifully. I only had aluminum 7x4 loaf pans and this recipe gave me 3 loaves. I didn't have pumpkin pie spice and used 2 tsps cinnamon and 1/2 tsp of nutmeg and ginger. (I didn't have cloves.) I also added walnuts. Like other reviewers suggested, I'll probably cut back a little on the sugar next time.

Lentil and Green Collard Soup

Wonderful, savoury and hearty soup! I was surprised this was so good without using stock. Like others, I sauteed the onions and collards with the garlic and also added some at the end like the recipe states. I cut back on the salt as well. I'm looking forward to seeing what it's like cold, trying different leafy greens and maybe adding carrots. I keep heaping more and more ladlefulls in my bowl...totally addictive! Thanks for sharing Farah! Take 2 wasn't as stellar and didn't have the same depth. Take other reviewer's advice and err on the side of less lemon juice. I think too much lemon altered my 2nd batch. I tried another reviewer's suggestion and added some rice and it became a wonderful one bowl meal!

Black Bean and Salsa Soup

I always appreciate a simple, easy and of course, tasty recipe...and this is one of them! Like others, I've sauteed onion/garlic added cayenne, cilantro and added some rice and shredded cheese with each serving. Very satisfying and adaptable. After making it a couple of times with medium salsa, I decided to try hot salsa and this made it even better!

Ginger Crinkles

I had a serious craving for ginger cookies and decided to give these a try. I was curious how cookies without shortening or butter would turn out and I wasn't disappointed...these are fabulous! I didn't use a full cup of sugar and they were plenty sweet. It could just be my oven, but 15 min. bake time was way too much and they were close to burning after 10 min. My only problem around these cookies is self control and not eating the whole batch in one sitting!

Sushi-Inspired Tuna Salad

I often enjoy this as an alternative to regular tuna salad. I add a splash of soy sauce and finely chopped cucumber. It's a great snack with rice crackers... Thanks for sharing JENJEN!

Oatmeal Blueberry Muffins

I loved these moist and hearty muffins...I added a tad more sugar and baked at 375 for 20-25 minutes. It could just be my oven...I rarely bake muffins at over 400. I also found 1 cup of blueberries to be plenty. This is my new favourite blueberry muffin recipe!

Chili-Roasted Kale

I was very excited to try this recipe with some leftover kale. I made the mistake of over salting...I didn't have kosher salt and just used sea salt and should have decreased the amount. Like another reviewer, I used about 1 tsp of chili powder and the flavour was great. Next time I will be more watchful during the last few minutes of cooking time since I came close to burning the whole batch--I'm looking forward to correcting my mistakes and trying this again!

Creamy Carrot With Curry Soup

This was ok, but something was missing for me...it felt like pureed baby food and didn't have a depth or richness I'd like in a creamed soup. I did use veggie boullion cubes because I didn't have chicken broth so perhaps this is why it lacked depth. I have substitued veggie broth for chicken before and it's been ok. I may try again with chicken stock and maybe adding a yam to make it a bit richer.
